Here are our 5 easy and yummy keto comfort food dinner ideas for the week:
1.) Keto Bacon Cheeseburger Casserole
Prep Time: 15 minutes | Cook Time: 35 minutes | Serves: 4
This mouthwatering casserole has all the delicious flavors and ingredients of yummy bacon cheeseburgers! Yep, this hearty and comforting meal idea would make your casserole loving grandma proud, and it makes for a super easy low carb meal for your hungry family any day of the week.
INGREDIENTS:
- 1/2 pound bacon
- 1 pound ground beef
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 1/2 cup heavy whipping cream
- 3 large eggs
- 2 oz. chopped jalapenos, canned
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 7 oz. cheddar cheese, shredded and divided
- Any desired keto burger toppings such as pickles, lettuce, chopped tomato, etc.
2.) Buffalo Chicken Zucchini Boats
Prep Time: 15 minutes | Cook Time: 30 minutes | Serves: 4
It’s time to get saucy with these tangy Buffalo chicken stuffed zucchini boats! This easy meal is satisfying and full of bold flavor you will LOVE!
INGREDIENTS:
- 1 pound ground chicken or turkey
- 1/2 cup Buffalo chicken wing sauce
- 4 medium-sized zucchini
- 1 cup Italian blend cheese, shredded
- Optional Toppings: Green onions and bleu cheese, chopped and crumbled
3. Keto Cream Cheese Crack Chicken
Prep Time: 15 minutes | Cook Time: 16 minutes via Instant Pot | Serves: 8
This super easy no-fail dish that results in shredded chicken with a rich cream cheese herb sauce. Serve it over zucchini noodles, cauliflower rice, or steamed broccoli.
INGREDIENTS:

- 1 can Rotel tomatoes and green chilies
- 4 cups chicken broth

- 1 teaspoon ancho chile powder
- 1 and 1/2 cups Mexican blend cheese, shredded
- 10 oz. frozen riced cauliflower

5.) Keto Mississippi Pot Roast

- 2 cups fresh cut green beans
- 1 tablespoon beef base
- 1 tablespoon dried dill
- 1 tablespoon dried parsley
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 teaspoons salt
- 2 teaspoon pepper
- 1 stick salted butter
- 6-8 peperoncini peppers
- 1 1/2 cups beef broth
Breakfast, Lunch, & In-Betweens
Breakfast can be as simple as coffee with heavy cream or bacon and eggs if you’re feelin’ hungry. You can also go the extra mile and prepare these amazing skillet breakfast burritos for the week! Another idea would be to prepare some homemade keto bagels, and toast them up each morning with cream cheese.
For lunch or a snack, try these ranch zucchini chips, or perhaps compile some simple keto snack boxes to have on hand.

Love how easy you have made this. I did pretty good my first week as I am one doing this. I just need to figure out a way to scale recipes back to 2 servings THEN figure out the shopping needs. I’ve had so much left over and not sure what will freeze well. BUT that said this has been a great tool and I appreciate all the work you have done to make this easy for me. 🙂
I’m doing the keto 30-day challenge as well, tammyluther! I have the exact same problem. There’s only three of us in the house and these meals are huge so we have lots of leftovers for days. After a few days, I had to skip making dinner so we could continue eating the leftovers. I’m thinking about just cutting the recipes in half. I think (for me) that’s the easiest way.
You could use 2 smaller casserole dishes for the recipe: cut in half, bake one, freeze the other.
