These Peanut Butter Chocolate Chip Cookie Bars Are a Must-Try Keto Treat

Oh my, here’s an easy keto dessert you’re gonna want to make soon!

If you miss gooey chocolate chip cookies, then you have to make this keto dessert! I just baked these incredible Peanut Butter Chocolate Chip Cookie Bars from the cookbook Southern Keto, and I’m excited to share my review of this sweet recipe.

Overall, I am really enjoying cooking from this cookbook this month as part of our monthly keto book club.

The beautiful part about these delicious bars is the fact that they take one bowl to make and require easy to find keto ingredients. In fact, I didn’t even have to go to the store to make them because peanut butter and sugar-free chocolate chips are both must-have keto pantry staples in my household.

Hip Recipe Tips: 

If you’re not stocked up on sugar-free chocolate chips, you’re missing out! I love these delicious Choc-Zero dark chocolate baking chips as a yummy option, and love that you can buy them via Amazon!

Make sure to pick a natural peanut butter without lots of added sugar, or a keto-specific variety like this nut butter blend with MCT oil. I personally think you could use almond butter instead if desired here, too.

This recipe is sweetened using erythritol and a few drops of liquid stevia. I love Swerve as a granular sweetener and thought it tasted great in these peanut butter cookie bars! There was no after-taste and it was perfectly sweetened.

I followed Natasha Newton’s recipe as written and it produces perfect results!

You get to devour soft and chewy bars with the perfect chocolate peanut butter combo. My family really enjoyed them and the texture and taste are so satisfying. In fact, these Peanut Butter Chocolate Chip Cookie Bars may be one of our favorite keto baked goods.

My kids are normally very picky with keto treats and they ate these without even asking if it was keto, so this is a winning idea for sure. 🙌

    I highly recommend the peanut butter bar recipe. It satisfied my Reese’s peanut butter egg craving. So delicious.

    Looking forward to trying the recipe you posted…if I can get past the peanut butter bars…they were that good!

    Thanks for the review – I was looking at this recipe tonight. I’ve noticed a lot of the recipes/products on H2K gravitate toward treats & sweets. I’m hoping you’ll try some of the savory recipes I didn’t have as much luck with. For example, the blistered okra was stringy and I had to cut it up so my kids (and I) wouldn’t choke on it. I didn’t have much luck with either of the breakfast skillets either – they were meh. I applaud the creativity but this book has been a little hit or miss for me.

      Oh darn, I haven’t tried the okra. I have personally made the fried chicken and chili pot pie – those were yummy 😋 Hope that helps!

        The okra flavoring was really good – it was just the texture I had trouble with. I was thinking of mixing it up and putting it in the dehydrator for snack food instead of the blistering cooking method she used.

    Can PB2 be used in place of peanut butter?

    If I left the eggs out do you think it would be safe to eat raw? I love the dough when baking this but I know it wouldn’t be safe to eat it raw with the eggs

      I think you could leave the eggs out and eat raw as the rest of the ingredients would be safe. You wouldn’t need baking powder if you eat it raw as it’s only to help them rise.
