The cream cheese and seasonings in this soup make for an insanely delicious and brightly flavored broth. The ground beef and diced tomatoes are filling and extremely comforting as well! Thankfully this slow cooker method is simple, and it consists of browning the ground beef on the stove first, then throwing the rest of the ingredients in the slow cooker.

Hip Tips:

  • You can even make this in your Instant Pot! Set Instant Pot to “Saute” mode. Brown ground beef with onions and garlic. De-glaze pan with broth. Add the remaining ingredients. Close lid and set cook time for 5 minutes on ‘Soup” mode. Let pressure naturally release for 5 minutes. Stir well and serve with desired toppings.

keto taco soup

The best soup I’ve had in a long time!

Oh, man! This soup is so incredibly YUM. I’m a big fan of making a batch of soup and then heating it up during the week for leftovers, and this soup is just as great the next day.

Feel free to top it with keto-friendly add-ins such as avocado, shredded cheese, hot sauce, and sour cream.

  2. Jan

How do you get that much fat and that much protein per serving from these ingredients

    • Bill Johnson

The tomatoes are not on the ingredients list….
      I just made the recipe….

      • Jennifer (Hip Sidekick)

The tomatoes are in the Rotel!

  3. Jodi Thiel

Do you think this could be freezed?

    • Lina D

Yes I do, readers have said they have frozen with success.

  4. Carla Stewart

    What is the serving size?

    • Lina D

About a cup – hope that helps

  5. Brenda

  6. Kim

My entire family LOVED this!! Thank you so much!

    • Lina D (Hip2Save Sidekick)

      That’s so great!!

  7. Chloe

How do i go about cooking it stovetop

    • Amber (Hip Sidekick)

Hi Chloe! You could cook it on the stove, in a large pot, beginning in step 2. Hope that helps!

  8. Marissa

I don’t really care for spicy things, do the ancho chile powder and the green peppers add any heat? Also, do you have a preferred recipe for the home made taco seasoning? Looking forward to trying this!

  9. Sarah E Edwards

We made this last night. YUMMM and more YUM! Made it on the stove instead. Bomb.com. We both had 2 cups…Yeyyy US!

    • Lina D (Hip2Save Sidekick)

Perfect! That’s so great Sarah! Thanks for sharing ❤️

  10. Becky

Delicious! I like to stir the cream cheese in with the browned ground beef until it melts before adding to the crock pot, just because sometimes the cream cheese ends up clumpy if I throw the whole brick in there. But either way, awesome flavor! I did drain a bunch of the grease but there was still plenty left. 🙂 great topped with avocado and sour cream!

    • Collin (Mrs. Hip)

YUM! Thanks so much for taking the time to comment, Becky! Good to know you have been loving the taco soup!

  11. Kristin

What is the cook time for the Insta-pot?

    • Amber (Hip Sidekick)

Hi Kristin! Here is what we suggest when using the Instant Pot –
“Set Instant Pot to “Saute” mode. Brown ground beef with onions and garlic. De-glaze pan with broth. Add the remaining ingredients. Close lid and set cook time for 5 minutes on ‘Soup” mode. Let pressure naturally release for 5 minutes. Stir well and serve with desired toppings.”

      Hope this helps!

  12. koffee

Have you used less fat cream cheese?

    • Amber (Hip Sidekick)

Hi there! Less fat cream cheese is bad! Remember, on the keto diet, you want your fat intake to be higher. When they take the ‘fat’ out of cream cheese (or any item on the market), they in turn fill it with sugar to make it taste good. 😊

  13. cathy

I have made this several times, really good

    • Lina D (Hip2Save Sidekick)

We’re glad to hear it! Thanks for sharing 😊

  14. Maria

Just made it it was amazing! Is it safe to freeze for later in the week😁

    • Amber (Hip Sidekick)

Hi Maria! Other readers have had success freezing theirs! Hope this helps!

  15. koffee

If i use store bought taco seasoning, do I use same amount?

    • Jennifer (Hip Sidekick)

You can use the same amount, however, if you are eating keto then be sure to read the ingredients. Store-bought taco seasoning will sometimes have a small amount of Potato Starch and Sugar. Just make sure this lines up with how you and your family are eating.

  16. Gisela

I just made the soup in 2 hours on high in my crockpot but the cream cheese is still clumpy. Do I need to leave it longer?

    • Lina D (Hip2Save Sidekick)

You could try turning down the temperature next time before adding the cheese. Also some readers have changed the steps to melt the cream cheese earlier on. Hope that helps!

  17. Stephanie Crawford

Rotel with green peppers? Or green chiles? I’ve never heard of it with peppers.

    • Lina D (Hip2Save Sidekick)

      It’s chiles- i fixed, Thanks!

  18. Lisa M

I am in love with this soup except I made a few substitutions. I had chicken breast already thawed and substituted it for the hamburger and I didn’t have the ancho Chile powder so I used Kroger brand Chipotle Chile Pepper and it was not only a Big hit at home but I made another pot to take to work that week and it was a Big hit there as well. Thank you so much for the recipe, can’t wait to try the original with the hamburger in it.

    • Collin (Mrs. Hip)

Oh awesome! You’re so welcome, Lisa M! Thanks for letting us know how your version turned out! Hope you enjoy it with the ground beef as well!

  19. Amanda

Can I cook this on low for 8 hours?

    • Lina D (Hip2Save Sidekick)

Yes, we are thinking this hearty ground beef soup would be fine! Thanks 🙂

  20. Debra

Since the recipe doesn’t specifically say to drain the Rotel, I assume you add the Entire contents of the can? (with all liquid) Is that right??

    • Lina D (Hip2Save Sidekick)

Yes I do that – correct.

  21. Tami

This is a great soup! I am making it…….again! O luv this time I am doubling the recipe!!

    • Lina D (Hip2Save Sidekick)

Oh that’s so nice to hear! Thanks for sharing Tami ❤️

  22. Debi

Made this twice with no changes to any ingredients, including the home-made taco seasoning and it is delicious. I can eat it for days without tiring of it. My only change was I didn’t use a slow cooker the 2nd time. I sautéed the onions and garlic, dumped the cooked hamburger and all other ingredients in a large pot and simmered for 10-15. It was perfect.

    • Lina D (Hip2Save Sidekick)

Oh that’s so nice! Thanks for sharing – we love this soup too.

  23. Megan

Do you drain the hamburger meat? I’m assuming so but I wasn’t sure if the fat were needed for the flavor. Thanks! I’m making this over the weekend.

    • Amber (Hip Sidekick)

You’re welcome, Megan! It can depend on the fat content of the meat. If you are using 80/20 and have grease, you may wish to drain it. Hoping you enjoy it!

  24. Megan

Hi! I am dairy free and found a vegan cream cheese made with cashews (super yummy) but I’m worried about adding into soup in slow cooker – maybe at end? This looks so yummy but dairy is not my friend 😢. Thoughts???

    • Angie (Hip2Keto Sidekick)

Hey there Megan! Fantastic question! You can add it at the end but it may alter the flavor. Also make sure it is room temperature for best results. You may also use tofu if you like that instead. One other option is to omit it all together as this recipe is delicious with or without it! Enjoy!

      • Megan

Thank you so much! I appreciate it. Learning to cook df & gf on top of an onion allergy has been a learning curve. But I’m attempting to make yummy food despite the challenge. Thanks again!

        • Angie (Hip2Keto Sidekick)

Your so very welcome Megan! I’m sure its not easy. I am gf myself so I completely understand ❤

  25. Erika

Do you drain the can of rotel?

    • Angie (Hip2Keto Sidekick)

Hi Erika. You add the whole can undrained. Easy peasy! Enjoy❤

  26. Maria

Does the garlic get cut up or minced or does it just need to stay in the cloves and just basically used for flavor so you just take it out of the meat after you cook it and before you put the meat in the crock pot?

    • Lina D (Hip2Save Sidekick)

Hi Maria – It’s minced- sorry! We added that word in the ingredients just now – thanks!! So you’d mince the garlic in with the onion and beef.

  27. Ashley

I only have beef stock. Should I run to the store or can I sub?

    • Lina D (Hip2Save Sidekick)

      I think that’d work great! 👍

  28. Maggie

Have you ever added black beans or corn?

    • Jennifer (Hip Sidekick)

Beans and corn are both high in carbs making them not very keto-friendly. If you are not following a ketogenic diet, you sure could!

  29. Trish Hansford

Taco soup? Now, who would have thought about a concoction like this. I made it last night and it was awesome. Tons of flavor and very comforting. Leftovers a plus! Thanks for a great recipe. Oh, almost forgot, I made it in the Instant Pot.

    • Collin (Mrs. Hip)

Yay! SO glad to hear how yummy it turned out, Trish! Thanks a bunch for the feedback!

  30. Barry Kirkpatrick

Great soup, just finished eating my first bowl and second half bowl. Really great!!!

    • Angie (Hip2Keto Sidekick)

Hi Barry! Thank you for your feedback. This one is a family favorite for us too♥

  31. Amber

Can the rotel be substituted with something else? Inwould like to make this but am not a fan of rotel.

    • Lina D (Hip2Save Sidekick)

Oh ya maybe diced tomatoes instead.

  32. Linda

    Can i double this recipe

    • Lina D (Hip2Save Sidekick)

Yes, sounds like a great idea!
