Slow Cooker Keto Taco Soup

Ingredients

For the taco seasoning:

  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the soup:

  • 2 lbs. ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz. cream cheese, softened
  • 1/2 cup fresh cilantro, chopped
  • 2 - 10 oz. cans Rotel with green chiles
  • 4 cups beef broth
  • optional toppings (shredded cheese, jalapeno, and avocado)

Directions

Mix the seasonings together in a small bowl to make the taco seasoning blend.

In a skillet on the stove, crumble and cook ground beef, diced onion, and garlic over medium heat. Drain the grease. Place the pan with the meat mixture back on the stovetop.

Reduce heat level to low. Add the seasonings to the meat mixture and stir. Add the cream cheese and stir to melt.

Transfer the mixture from the pan to a slow cooker. Add the cilantro, Rotel, and beef broth, and stir to combine. Close the lid and set the slow cooker on low for 4 hours, or on high for 2 hours.

Serve with your choice of toppings. Enjoy!

The cream cheese and seasonings in this soup make for an insanely delicious and brightly flavored broth.

Two pounds of ground beef and diced tomatoes make this soup very hearty and extremely comforting as well! Thankfully this slow cooker method is simple, and it consists of browning the ground beef on the stove first with seasonings and cream cheese, then throwing the rest of the ingredients in the slow cooker.

Tips for making the best Crockpot Keto Taco Soup:

    • You can use a couple of tablespoons of our homemade taco seasoning mix in your soup, or I also listed out what seasonings to use if you don’t want a full batch in the recipe. It’s easy to make and so yummy!
    • If you dislike chopping onions and garlic as much as I do, an onion chopper like this one makes it so much faster and easier. It’s one of my favorite kitchen tools!
    • I prefer 85/15 ground beef in soups so that’s what I used. You can of course use higher fat, like 80/20 or 75/25. I have also made this using ground turkey so you can make that swap as well. Keep in mind, the nutritional values are calculated on what I used (85/15 ground beef).

Additional Notes

You can even make this keto taco soup in your Instant Pot!

Set Instant Pot to "Sauté" mode. Brown ground beef with onions and garlic, and drain grease. Stir in seasonings, and add cream cheese and stir to melt. De-glaze pan with broth. Add the Rotel. Close the lid and set the cooking time for 5 minutes on 'Soup" mode. Let the pressure naturally release for 5 minutes. Stir well and serve with desired toppings.

      Hi there! Less fat cream cheese is bad! Remember, on the keto diet, you want your fat intake to be higher. When they take the ‘fat’ out of cream cheese (or any item on the market), they in turn fill it with sugar to make it taste good. 😊

      You can use the same amount, however, if you are eating keto then be sure to read the ingredients. Store-bought taco seasoning will sometimes have a small amount of Potato Starch and Sugar. Just make sure this lines up with how you and your family are eating.

    I am in love with this soup except I made a few substitutions. I had chicken breast already thawed and substituted it for the hamburger and I didn’t have the ancho Chile powder so I used Kroger brand Chipotle Chile Pepper and it was not only a Big hit at home but I made another pot to take to work that week and it was a Big hit there as well.     Made this twice with no changes to any ingredients, including the home-made taco seasoning and it is delicious. I can eat it for days without tiring of it. My only change was I didn’t use a slow cooker the 2nd time. I sautéed the onions and garlic, dumped the cooked hamburger and all other ingredients in a large pot and simmered for 10-15. It was perfect.

    Hi! I am dairy free and found a vegan cream cheese made with cashews (super yummy) but I’m worried about adding into soup in slow cooker – maybe at end? This looks so yummy but dairy is not my friend 😢. Thoughts???

      Hey there Megan! Fantastic question! You can add it at the end but it may alter the flavor. Also make sure it is room temperature for best results. You may also use tofu if you like that instead. One other option is to omit it all together as this recipe is delicious with or without it! Enjoy!

I don’t fuss with the onions and garlic as the taco seasoning use has it already – I top it with some cheese, sour cream and taco sauce and it is AMAZING!! Literally just had it this past weekend and I even brought it to work for a “Souper Bowl” party we had this past January and there wasn’t any left over!

      YES! You could sub it for one cup cream, but wait until right before serving to add it so it doesn’t curdle. It will also change the nutritional values.

    Substituted lean ground turkey for ground beef, and chicken broth for beef broth. I couldn’t find the ancho chili powder, so I used dried ancho chilies instead. It turned out fantastic! Will definitely make again! I might use a little less broth though. But otherwise, excellent!!

    I just finished making this. Oh my!!! It is DELICIOUS!!!!!!!!!!! I did do as some had commented about melting the cream cheese with the hot meat before adding all of the other ingredients. I also used one regular rotel and one HOT rotel, and also cooked it on the stovetop. WOW. I’m going to have to make myself not eat the whole pot.

    I am making this right now in my Ninja Food I using the pressure cooker. I already know it will be delish. I love sausage so I made this with ground sausage. I also drained a can of tomatoes and added them. I also did not drain the can of chilies. I will come back after dinner to post again.     Really loved this recipe. I took the advice and melted the cream cheese with the ground beef. I think next time I’ll add more green chiles and another veggie. Maybe cauliflower. Will definitely make this again.
