Ingredients
- 2 lbs. ground beef (I used 85% lean)
- 3 cloves garlic, minced
- 1/2 cup onion, diced
- 2 tablespoons homemade taco seasoning
- 1 /2 teaspoon ancho chile powder
- 2 - 10 oz. cans Rotel with green chiles
- 8oz. block cream cheese
- 1/2 cup fresh cilantro, chopped
- 4 cups beef broth
- optional toppings (shredded cheese, jalapeno, and avocado)
Directions

In a skillet on the stove, crumble and cook ground beef, diced onion, and garlic.

Transfer ground beef to Crockpot slow cooker. Add seasonings and remaining ingredients.

Close lid and cook on low for 4 hours, or 2 hours on high.

Delicious! I like to stir the cream cheese in with the browned ground beef until it melts before adding to the crock pot, just because sometimes the cream cheese ends up clumpy if I throw the whole brick in there. But either way, awesome flavor! I did drain a bunch of the grease but there was still plenty left. 🙂 great topped with avocado and sour cream!

I didn’t cook the cream cheese ahead of time in the meat I through the whole brick of cream cheese at once and I left it on low for a few hours and a hour ago I raised the temp to high Will the cream cheese ever soften up and and quit being lumpy?
Yes, once you are done cooking you should be able to stir it and it will melt in the soup.
Ha! Wish I’d read this comment before making this for Christmas Eve dinner tonight. We had some real touch-and-go moments of freak out when it was almost time to eat and the cream cheese was just lumps throughout the soup. I tried to simmer it, smear apart the cream cheese with a spatula, then whisk the soup with a whisk. The soup was too brothy. So I added another half brick of cream cheese and boiled it, and finally I added about 75 grams of Velveeta. At long last, and after much fretting, the soup turned creamy and everyone raved about it. It was a big hit. I’ll cook the cream cheese with the ground beef first next time. LOL

Have you used less fat cream cheese?
Hi there! Less fat cream cheese is bad! Remember, on the keto diet, you want your fat intake to be higher. When they take the ‘fat’ out of cream cheese (or any item on the market), they in turn fill it with sugar to make it taste good. 😊

If i use store bought taco seasoning, do I use same amount?
You can use the same amount, however, if you are eating keto then be sure to read the ingredients. Store-bought taco seasoning will sometimes have a small amount of Potato Starch and Sugar. Just make sure this lines up with how you and your family are eating.
I just made the soup in 2 hours on high in my crockpot but the cream cheese is still clumpy. Do I need to leave it longer?
You could try turning down the temperature next time before adding the cheese. Also some readers have changed the steps to melt the cream cheese earlier on. Hope that helps!

I am in love with this soup except I made a few substitutions. I had chicken breast already thawed and substituted it for the hamburger and I didn’t have the ancho Chile powder so I used Kroger brand Chipotle Chile Pepper and it was not only a Big hit at home but I made another pot to take to work that week and it was a Big hit there as well. Since the recipe doesn’t specifically say to drain the Rotel, I assume you add the Entire contents of the can? (with all liquid) Is that right??

Made this twice with no changes to any ingredients, including the home-made taco seasoning and it is delicious. I can eat it for days without tiring of it. My only change was I didn’t use a slow cooker the 2nd time. I sautéed the onions and garlic, dumped the cooked hamburger and all other ingredients in a large pot and simmered for 10-15. It was perfect.

Hi! I am dairy free and found a vegan cream cheese made with cashews (super yummy) but I’m worried about adding into soup in slow cooker – maybe at end? This looks so yummy but dairy is not my friend 😢. Thoughts???
Hey there Megan! Fantastic question! You can add it at the end but it may alter the flavor. Also make sure it is room temperature for best results. You may also use tofu if you like that instead. One other option is to omit it all together as this recipe is delicious with or without it! Enjoy!

Does the garlic get cut up or minced or does it just need to stay in the cloves and just basically used for flavor so you just take it out of the meat after you cook it and before you put the meat in the crock pot?

I don’t fuss with the onions and garlic as the taco seasoning use has it already – I top it with some cheese, sour cream and taco sauce and it is AMAZING!! Literally just had it this past weekend and I even brought it to work for a “Souper Bowl” party we had this past January and there wasn’t any left over!

This soup was quick and easy to make, and so delicious. I made it in a pot on the stove, and it turned out great. After simmering it for a few hours, it was beyond flavorful. I will definitely make this again and again. My husband isn’t on a keto diet, and he loves it!

I’m not a fan of cream cheese, can heavy cream be used?
YES! You could sub it for one cup cream, but wait until right before serving to add it so it doesn’t curdle. It will also change the nutritional values.
I am unable to find ancho chili powder. Is there any other substitutions you could recommend? All I have is regular chili powder, not sure if that is the same this recipe calls for?

Substituted lean ground turkey for ground beef, and chicken broth for beef broth. I couldn’t find the ancho chili powder, so I used dried ancho chilies instead. It turned out fantastic! Will definitely make again! I might use a little less broth though. But otherwise, excellent!!

I just finished making this. Oh my!!! It is DELICIOUS!!!!!!!!!!! I did do as some had commented about melting the cream cheese with the hot meat before adding all of the other ingredients. I also used one regular rotel and one HOT rotel, and also cooked it on the stovetop. WOW. I’m going to have to make myself not eat the whole pot.

I am making this right now in my Ninja Food I using the pressure cooker. I already know it will be delish. I love sausage so I made this with ground sausage. I also drained a can of tomatoes and added them. I also did not drain the can of chilies. I will come back after dinner to post again. Really loved this recipe. I took the advice and melted the cream cheese with the ground beef. I think next time I’ll add more green chiles and another veggie. Maybe cauliflower. Will definitely make this again.

Lord, this was good!!! I couldn’t find where to rate it. Only thing I found was that there were chucks of cream cheese after cooking.(not huge) Any way around that. I heated in the micro until warm before adding. First recipe made in my Instant Pot. What a great success! So satisfying! Thanks!

Tonite was the third time I have made this soup and it gets better every time! I add two bags of baby spinach to the crock pot for last 20min to add more fiber and it’s perfect!!
