Keto Puppy Chow… With a Surprising Ingredient!

Directions

In a microwave-safe container, add chocolate chips and coconut oil.  Microwave in 20-second intervals, stirring between intervals until melted and smooth.

Add in PB Fit powder to melted chocolate and stir.

On a parchment-lined cookie sheet, spread out pork rinds. Drizzle melted peanut butter chocolate over the pork rinds. *You can drizzle as much or as little as you'd like.

Dust Swerve confectioners over the pork rinds to coat. Place cookie sheet in the refrigerator for 10 minutes to allow chocolate to harden. Once cooled, break up any pieces that might have bonded together and store in a sealed container.

In this keto Puppy Chow recipe (also known as Muddy Buddies), this tantalizing flavor combo finds a crunchy home on top of…wait for it… pork rinds! This typically savory snack makes the perfect base for this treat with its airy texture and undeniable crunch.

After the pork rinds are tossed in peanut butter powder and drizzled with sugar-free chocolate, the Puppy Chow gets some extra sweetness with a dusting of confectioners Swerve.

Hip Recipe Tips:

    • Using sugar-free PB Fit powder gives a true peanut butter taste, unlike a plain almond butter. If you do not have PB Fit powder, you can use 1 tablespoon of no-sugar-added peanut butter instead.
    • Feel free to experiment with your favorite flavors, like using white chocolate & 1 teaspoon of peppermint extract for a holiday version.
    • Use as much or as little peanut butter chocolate as you desire and/or as it fits into your macros.

Don’t be alarmed by the high total carb count!

Fiber and erythritol (the main ingredient in Swerve) do not affect blood sugar in the same way that regular carbs do, so we subtracted them from the total carb count. You’ll see that the net carbs are much lower once you remove the sugar alcohols and fiber.

    In case anyone is on the fence, give it a shot. We made this and it was gone in about 2 hours. I made it with more chocolate than recommended and used a salted dark lilly’s bar. It’s amazing especially if you grew up eating the original.

    I do this but I heat the ingredients and then pour the whole works into a large ziplock bag right onto the porkrinds. You zip it up and mix it around and cool to harden. Your way is prettier, I think the zip lock bag allows you to coat the pieces more thoroughly, inside and out.
