Yum, yum, yum! Your tongue will sing and do a happy dance when tasting that first bite of this keto mac & cheese. The cheesy sauce is creamy and tastes just like real cheese. After you cook the pasta, the directions say to add a 1/4 cup of heavy cream with the powdered cheese sauce. I also added the optional 2 tablespoons of butter, because why not?
I did boil the macaroni noodles a little longer than recommended. The box said to boil for 5 to 8 minutes but I cooked the noodles for closer to 10 minutes. They still seemed a little hard at 8 minutes to me, but it could just be personal preference on my part.

I ate this keto mac & cheese for lunch the day I made it and could only eat half of the box — there are 2.5 servings per box for reference. It’s pretty filling from the lupin flour. 24 grams of protein and 20 grams of fiber per serving is a lot! I ate the leftovers for breakfast the next day and it did not disappoint! 😋
