Ingredients

Fathead dough:

  • 3/4 cup almond flour
  • 1 3/4 cups mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 egg
  • 1/2 teaspoon Italian seasoning
  • 1 pinch salt

For the Pigs in a Blanket:

  • package of 8 hot dogs
  • sesame seeds or poppy seeds for topping (optional)

Directions

Preheat oven to 425 degrees F.

To make Fathead dough:

Combine almond flour and mozzarella cheese in a microwave-safe bowl. Add in cream cheese and cook in the microwave for one minute. Stir and then cook for an additional 30 seconds in the microwave. Then, mix in egg, salt, and Italian seasoning, and stir.

Separate dough into 8 sections and roll into balls.

Using your hand, flatten and roll each piece of dough around a hot dog.

Place on a parchment covered baking pan seam side down. Sprinkle sesame seeds over top, if desired.

Bake in the oven at 425 degrees for about 14-17 minutes until dough is cooked and slightly brown.

Ingredients

Preheat oven to 350 degrees. In a large bowl, cream together butter, cream cheese, and Swerve with a handheld mixer until smooth.

Add eggs and vanilla extract into the bowl. Continue mixing with the hand mixer until fully incorporated, about a minute.

In a separate bowl, mix together baking powder and almond flour. Slowly add the flour mixture to the cake batter, and mix for 20 seconds. Fold in diced strawberries to your batter.

Grease a loaf pan with cooking spray or butter (although, it may be more likely to stick to the pan with butter), then pour batter into the pan and spread evenly.

Tip - If you're really worried about the cake sticking, I'd suggest first covering the loaf pan with parchment paper, then also spraying the parchment paper with cooking spray.

Place into the oven and let bake for 50-55 minutes. Use a toothpick to check for doneness in the middle of the cake. Let cool.

While the pound cake is cooling, add in 1 cup of sliced strawberries and 1 tablespoon of Swerve sweetener to a small saucepan over medium heat. Bring to a simmer stirring continuously for about 3 minutes, remove from heat.

Slice pound cake and pour strawberry glaze over cake. If desired, top with low-carb whipped cream or keto-friendly vanilla ice cream. Enjoy!

Keto Peanut Butter Bacon Burger

Ingredients

Peanut butter sauce:

Hamburger patties:

  • 2 lbs. 80/20 ground beef
  • pinch of salt
  • pinch of pepper
  • pinch of garlic powder

Additional burger toppings (optional):

For the peanut butter sauce:

In a small saucepan, add in all the peanut butter sauce ingredients and stir over low-medium heat. Cook until the sauce is melted together, about 3-4 minutes, and set aside.

For the burgers:

Divide ground beef into 4 equal parts. Create a hamburger patty about 4" round and 1" thick. Season with salt, pepper, and garlic powder on each side of the 1/2 pound hamburger patties. Cook hamburger patties as you prefer.

 

I grilled my burgers to medium doneness. To achieve just the right amount of pink for medium, grill for about 4 minutes per side.

For the burger assembly:

Plate your burgers on keto buns or lettuce wraps and drizzle the peanut butter sauce over the top. Finish off your burger with your favorite toppings and enjoy!

Shortcake Chaffle:

Whipped Cream:

Directions

In a medium bowl, add all chaffle ingredients and mix together until you have reached a pancake-like batter.

Drop 3 tablespoons or 1 large ice cream scoop full of batter into your mini waffle maker. Let cook for 2 minutes and remove.

In a large bowl, add in whipped cream ingredients. With a handheld mixer, mix on medium-high until you have reached stiff peaks. This takes about 2-3 minutes.

Once you have 2 shortcake chaffles and the whipped cream made, you can now assemble. Start with a base chaffle, then add a layer of whipped cream and sliced strawberries. Repeat a second layer and top with whipped cream and a few slices of strawberries.

Drizzle with sugar free strawberry syrup if you like and enjoy!

No-Fail Oven Baked Salmon

Ingredients

  • 4 - 6 oz. salmon fillets
  • pinch of salt
  • pinch of pepper
  • freshly squeezed juice from 1 lemon
  • 4 teaspoons olive oil
  • 4 lemon slices
  • 4 sprigs of rosemary (or other herbs of choice)
  • 4 tablespoons grated parmesan cheese

Directions

Preheat oven to 375 degrees.

Place salmon fillets in a small casserole dish or glass baking dish. If you purchased salmon with skin, place the fillets skin side down (the skin easily peels off after it has been baked).

Generously salt and pepper the salmon.

Squeeze the juice of one lemon over the salmon and then drizzle olive oil over everything.

Add a slice of lemon and rosemary over each piece of fish (optional).

Let marinate in the fridge for about an hour. If you don't have an hour, just marinate for as long as you can. It will still be delicious even without marinating at all.

Cover baking dish with aluminum foil and bake for about 20 to 25 minutes or until fish easily flakes with a fork. Remove foil and turn up the heat on the oven to 425 degrees.

Add grated parmesan cheese to each piece of salmon. Bake for another 2 to 3 minutes until the salmon starts to look a little crispy.

Remove from the oven and serve right away. Yum!

  • 3 medium size chicken breasts

Marinade:

  • 1/2 cup mayonnaise
  • 1/2 cup olive oil
  • 1 tablespoon garlic
  • 1/4 cup shedded parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

Topping:

Directions

In a bowl, add all marinade ingredients, and whisk together.

Place chicken breasts in a Ziploc bag and use a meat mallet or rolling pin to tenderize the chicken breasts. To avoid piercing the bag, use the smooth side of the meat mallet. After pounding the meat, pour the marinade into the bag and let marinate for at least 30 minutes.

Preheat oven to 425 degrees.

After at least 30 minutes, remove chicken from marinade and place in an oiled cast-iron skillet and bake in the preheated oven for 15 minutes.

While the chicken is baking, in a small bowl, mix together keto bread crumbs, melted butter, and parmesan cheese. After 15 minutes of baking, pull out cast-iron pan and top the chicken with keto bread crumb topping. Bake for an additional 5 minutes.

Serve and enjoy!
