For the sweetened condensed milk:

Add coconut milk and butter into a medium saucepan. Bring ingredients to a boil over medium heat for 10 minutes, stirring regularly to prevent scorching.

Turn heat to low and add the keto sweetener, whisking until dissolved.

Simmer on low heat for 20 minutes, stirring the milk occasionally.

Once the milk has thickened, pour into a mason jar or another container and let cool completely. You can always do this step the day before and put in the fridge until ready to use.

For the McFlurry:

To a large bowl, add whipping cream. Whip using a hand mixer or stand mixer for several minutes until soft peaks form.

Whip in the vanilla extract, the keto sweetened condensed milk, and additional sweetener until combined. Taste to make sure it's sweetened to your preference.

Transfer the mixture to a Tupperware or Pyrex container with a lid. Add in the candy once in the container so you can evenly distribute it. Freeze for around 4-5 hours. Scoop and enjoy!

Tips for making the BEST McDonald’s Copycat Keto McFlurry:

  • The sweetened condensed milk will take a bit to cool down, so consider making this step a day ahead of time.
  • You’ll need to plan for about 4-5 hours of freeze time. If you leave it overnight, just let it sit out for a bit on the counter to soften as desired. If you have leftovers, store in the freezer for up to 2 weeks.
  • Feel free to sweeten this recipe to taste! Even after adding the sweetened condensed milk, I felt like it needed a bit more sweetener and added some additional confectioners keto sweetener. It dissolves and mixes up so well in this recipe.
