Keto White Chicken Chili – Easy Crockpot Dinner Idea!

Keto White Chicken Chili

yield: 8 SERVINGS

prep time: 10 MINUTES

cook time: 8 HOURS

total time: 8 HOURS 10 MINUTES

Ingredients

  • 4 large frozen chicken breasts
  • 2- 10 oz. cans of Rotel tomatoes (I used Chili Fixins)
  • 2 cups chicken broth (use 3 cups if using fresh or thawed chicken)
  • 1 small onion, diced
  • 2 garlic cloves, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin (add if you use regular Rotel)
  • 1 teaspoon chili powder (add if you use regular Rotel)
  • 8 oz. cream cheese, cubed
  • 1/2 cup heavy cream

Toppings (optional):

  • avocado, cut into cubes
  • cilantro, chopped
  • white cheddar cheese, shredded
  • sliced jalapeños

Directions

1

Add frozen chicken breast, Rotel cans, chicken broth, onion, garlic, salt, and pepper to the slow cooker. Cook on low for 8 hours. Stir occasionally, if you can. *Also add in cumin and chili powder if you are using regular cans of Rotel instead of Rotel Chili Fixin's or if you just want a stronger chili flavor.

2

Remove the chicken from the slow cooker and place it in a bowl or on a cutting board. Add heavy cream and cream cheese to the chili mixture and whisk to make sure everything gets mixed together well. Shred the chicken with two forks and add the chicken back to the slow cooker.

Note: Cut cream cheese into cubes so that it melts easier. You can easily use a hand mixer or whisk to break it up before adding the chicken back into the slow cooker.

3

Serve warm, and top chili with cilantro, avocado, jalapeño, and shredded cheese if desired. Enjoy!

Keto White Chicken Chili in a bowl

Here are a few recipe tips to keep in mind when making this keto white chicken chili:

  • I used Rotel Chili Fixin’s, but you can use the original Rotel can and just add 1 teaspoon of chili powder and 1 teaspoon of cumin if you can not find the all-in-one can.
  • Since we can’t use beans like a traditional chili, you can add cauliflower rice at the very end if you’d like to make it even heartier. Avoid adding it during the whole cooking process because it will become mushy.
  • I used frozen chicken breasts which means you can reduce some of the chicken broth as I did. If you are using fresh chicken breasts, add 3 cups of chicken broth.

Low-carb goodness in a bowl!

This keto white chicken chili recipe is so flavorful that you won’t even miss the beans. I made an extra batch to share with my neighbor and she didn’t know it was low-carb until I told her when she asked for the recipe.

It’s sure to be a real crowd-pleaser and it’s not super spicy so it’s something everyone can enjoy.

rotisserie chicken

Want to save time?

Grab a pre-cooked rotisserie chicken! I love to grab one when I’m at Sam’s or Costco and they’re always so tender and juicy, providing the perfect shreds of chicken for this recipe. Not only are they a great time saver for this chili, but you can’t beat the price as they are typically under $6.

My Sam’s Club and Costco also both sell packs of pre-cooked rotisserie chicken breasts that have already been deboned. That really saves so much time, and if you’re a fan of white meat then it’s even better!

If you are using pre-cooked rotisserie chicken, I recommend 4 cups for this chili recipe.

My Hip sidekick, Jenna, tried out this white chicken chili recipe and here’s what she thought!

“This keto white chicken chili smelled so good from the moment it started cooking! I love how easy it was to throw everything together, and with the cans of Rotel, there wasn’t a whole lot of prep other than opening the cans. The flavor is awesome, and I am definitely going to make it for my family again. Plus, it reheated beautifully the next day.”

Super delicious but super spicy! Next time I’m going to do one can regular Rotel and the other chili one. We did add the cauliflower rice so good this will be on our rotation for sure!

    • Amber (Hip Sidekick)

Oh good! Thanks for letting us know what you thought of it, Kyle!

  2. tiffany

    We loved this, thank you!

    • Jennifer (Hip Sidekick)

So glad to hear that! Thanks for the feedback, tiffany!

  3. Gail J.

Great recipe! Made this for the 3 of us, but ended up not sharing. Sooooo good. Will share next time – I promise. Only change I made was I used chicken thighs as that was what I had (removed skin when cooked) and still awesome.

    • Collin (Mrs. Hip)

Yay! I’m so glad you loved it, Gail J! Thanks for the feedback!

  4. Kristi

This is so good! I saved time by using four 12.5 oz cans of drained chicken and cooked it on the stove instead of slow cooked. Also did one can or regular rotel and one chili rotel. It still had a bunch of kick! Thanks for sharing!

    • Collin (Mrs. Hip)

Sounds delicious, Kristi! Thanks for coming back to share how yours turned out!

  5. Jenny

If I am using fresh chicken breasts, how long should I cook this for? I can’t wait to try it.

    • Amber (Hip Sidekick)

Hi Jenny! If using fresh chicken, you could do up to 4 hours give or take, depending on your brand of slow cooker as some may cook a bit differently. Also, be sure to add in 3 cups of chicken broth when not using frozen chicken, as noted above. Hoping this helps!

  6. Lydia

No Rotel Chili Fixins near me so I used the spices but added a little more (I like it seasoned & SPICY!). As usual, I made this keto recipe for myself and the DH, and “regular” white chicken chili for the kids that they always ask for. THEY ATE ALL OF OURS and didn’t touch the other one!!! So delicious & easy – adding it to our regular rotation.

    • Jennifer (Hip Sidekick)

Sounds like you made some great modifications! And, sounds like the kids loved it! Thanks so much for letting us know how it turned out for you, Lydia!

  7. Better Me

This is very good but a little too spicy for me with both cans of Rotel. I substituted 1 can of fire roasted tomatoes in my second batch and it was great.

    • Jennifer (Hip Sidekick)

What a great substitute! I think I’ll try that myself!

  8. Stephany

How would you cook this in a pressure cooker with thawed chicken?

    • Amber (Hip Sidekick)

Hi there! We haven’t tried it in a pressure cooker, however you could do 20 minutes on HIGH and slow release for thawed chicken. Also, be sure to add in 3 cups of chicken broth when not using frozen chicken. Hoping this helps!

  9. Christina.

I have a question. Do you mean after eight hours take out the chicken n shreds it then put it back in with the cream but for how long

    • Jennifer (Hip Sidekick)

It means after 8 hours, remove the chicken from the pot. After making sure the cream cheese and cream and well stirred in, add the shredded chicken back in and it’s ready!

  10. Andrea Genus

I made this with rotisserie chicken and added a few more spices than called for, served it with Monterey Jack cheese instead of white cheddar. Oh my goodness!!! It was delicious!!! My husband and kids loved it!!! This chili is going in the keto rotation!!

    • Jennifer (Hip Sidekick)

That’s awesome news! Your modifications sound great, too! Thanks, Andrea Genus!❤

  11. mrsdeml

Hi! I’m wanting to making sure I portion this correctly for myself so can you tell me how much 1 serving is? Is it 1 cup? Thank you!

    • Jennifer (Hip Sidekick)

      A serving is approximately 1 – 1 1/4 cup! Enjoy, mrsdeml!

      • mrsdeml

        Thank you!

        • Jennifer (Hip Sidekick)

          You are SO welcome!

  12. Sherree Stroud

We love this recipe. I do add 3 cans of navy beans rinsed & drained.

    • Amber (Hip Sidekick)

Thanks for sharing! Glad you’ve enjoyed it. 🤗💕 To stay keto, we don’t add any beans.

  13. Mary

Can this be frozen in single serving containers?

    • Trish (Hip Sidekick)

Hey there, Mary! We haven’t tried this, but you should be able to freeze into single serving containers! Let us know if you decide to give it a try! 💞
