Creamy seasoned chicken that's yummy and addicting using the Instant Pot or the Crockpot!
Ingredients
- 2 pounds raw chicken breasts, cut into pieces
- 2 - 8 oz. blocks cream cheese
- 4 cloves garlic, minced
- 1 tablespoon dried parsley
- 1 tablespoon tarragon
- 1 tablespoon onion powder
- 1 tablespoon dried dill
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup water or chicken broth
- 1 cup cheddar cheese, shredded
- 4 slices bacon cooked, crumbled *topping idea
- 3 green onions, sliced *topping idea
Directions

Instant Pot Directions:
Cut chicken breasts up into smaller pieces. Place them inside the Instant Pot along with all the seasonings, cream cheese, and water or broth.

Close the lid, set the valve to "sealing", and set the Instant Pot timer to 16 minutes on HIGH or MANUAL setting. After it's done cooking, do a quick release. Shred the chicken using two forks. Stir the sauce and chicken together.

Add the shredded cheddar cheese and half of the green onion. Stir and close the lid for a few minutes to melt the cheese and let thicken a bit. Remove the lid and serve chicken topped with remaining green onion and crumbled bacon.

Slow Cooker Directions:
Place the chicken along with all the seasonings, cream cheese, and water or broth in the slow cooker. Cook on HIGH for 3-4 hours, or on LOW for 6-8 hours until the chicken is tender and shreds. Follow the directions above from step 3.

Serve as desired. I served mine on top of frozen zucchini noodles I had on the stove while the chicken was cooking. Enjoy!

- You can serve it over zucchini noodles, over cauliflower rice, and it’s even delicious over steamed broccoli!
- If anyone in your family isn’t eating low-carb, they can have this served as a yummy sandwich with a bun. It can be adapted for everyone in the family!
- Any leftovers can be stored in the fridge for up to 4 days and are great reheated using the microwave.
- I tend to use chicken breasts for this recipe, but I am sure boneless chicken thighs would work as well.
- The seasonings in this chicken are easy to swap and adapt to your taste. For instance, if you don’t have tarragon on hand, dried oregano, rosemary, or an Italian seasoning blend would be an easy sub in.
- For a spicy variation, my husband likes to add chopped jalapeno in addition to onions.

Tried this in the crockpot tonight and it was good! I added dried oregano because I didn’t have any tarragon and thought the flavor turned out great. I also misread the directions and added the bacon in the beginning and it turned out fine! We still garnished with a little more bacon at the end too. Served over rigatoni for my husband and kids and steamed broccoli for me. Will make again!

I️ made this in my InstantPot and served over pan fried cauliflower rice. It tasted awesome and was & easy to make. Oh yeah, and I️ used the precooked bacon to make it even easier and that turned out just fine.
