Hip Tips for this cheesy keto ground beef casserole with broccoli:
- Fill free to switch out the broccoli with your favorite veggies. This casserole is a staple in my household and I love switching it up based on what I have on hand. You could even add some jalepeños for spice!
- Chopping vegetables is a breeze with the Pro Chopper—it’s such a time saver for this hamburger meat casserole!
- Make this hamburger meat casserole ahead of time by using a non-stick skillet to sauté the beef and assemble the ingredients in a 9×13 foil pan. Cover and pop it in the freezer until you’re ready to bake.
- Want to make it even heartier? While the casserole is wonderful on its own, you can serve it over mashed cauliflower for a filling meal or as a way to re-purpose leftovers!
Whether it’s a weeknight family meal or entertaining a large group of guests, this veggie hamburger meat casserole will be a huge hit with even the pickiest of eaters!
My Hip sidekick Erica loves this keto ground beef casserole recipe, too! Here’s what she had to say:
“This recipe was so simple and my whole family loved it! My kids did not originally want to eat it, but kept digging right in after they gave it a good ol’ taste! I couldn’t even tell I used frozen broccoli (it totally tasted fresh in the casserole). Such a great weeknight dinner. Next time, I plan on prepping this ahead over the weekend to just pop in the oven for busy weeknights!”

I made this last night and it is delicious!
The only thing I may do differently next time would be to cook the broccoli a bit before adding it, so that it is a bit softer.
Other than that this is a 10/10!
Yay! SO glad you enjoyed it, Katie! Thanks a ton for the feedback!
Looks so yummy! I am a big fan of broccoli. I typically add it everything I eat. Lolβ¦Not always, yeah but most of the times. Thanks for the recipe Collin. In India we are not good with making casseroles, I will not do any experiment and just copy your each move. I will definitely make it this weekend.
You’re very welcome, Priya! Hope you enjoy it!
I steamed broccoli first and did half hamburger half sausage. Delicious!
YUM! Happy to hear how good it turned out! Thanks for sharing with us!
Thanks for this recipe. We really enjoyed it, however, the cheeses already have lots of salt and I won’t add the teaspoon of salt the recipe called for.
You are welcome, Sue! Glad you enjoyed it!
I followed the recipe after I added some premade sliced buttered potatoes with a little parsley& garlic as a bottom layer of the casserole after that the recipe was followed to a tee. It was delicious & will be made again.
That looks delicious!
Thank you Lisa! Let us know if you make it! We would love to hear your feedback β€
Iβm so happy I made this casserole. It is delicious. I figured Iβd like it and I did. I made twice the recipe to freeze one for later. Thanks for the great recipe!
Hi Melody! So glad you loved it. Thanks for coming back and letting us knowβ€
Absolutely delicious!! We found a new keto favorite for sure. Iβve made it multiple times and I love it more and more each time. Thank you!
That’s awesome that you keep making this and continue to love it more, Tasha! It’s nice to have a fave!
Can you cook it in something other than a cast iron pan?
Yes! You would just saute the beef in a non stick skillet and then assemble in a casserole dish.
Here is the suggestion for making it ahead of time – “Make this ahead of time by using a non-stick skillet to sautΓ© the beef and assemble the ingredients in a 9Γ13 foil pan. Cover and pop it in the freezer until youβre ready to bake.”
Hope this helps!
Bf and I LOVED it! I didnβt have whipping cream so I substituted sour cream. No mozzarella so I used a mix shredded cheese I had on hand. Used fresh broccoli instead of frozen and cooked it till almost done before adding it to meat mixture. Tomorrow Iβll halve and gut a green bell pepper, stuff it with this and pass it off to Punkin as a whole new dinner! Win win!! ππ
Hi Crystal! I love your creative thinking. So glad that you both enjoyed this recipeβ€ Also great ideas on the substitutions. We are all about using what’s on hand! Thank you for you’re sweet feedback.
Loved it!!! I did 1 lb ground beef and 1 lb ground pork and everything else same. Family asked me to make it again in same week π
Woohoo! SO awesome! Happy to hear it was a hit! π
We made this for dinner two nights ago. FANTASTIC!!
This morning I took what was left over, heated it up, and served it on a toasted chaffle for breakfast! Simply WONDERFUL no matter how itβs served!!
I love the idea of serving it in a bell pepper!
THANK YOU for such a delightful recipe!
You’re very welcome, Lynda! Such a great way to eat the leftovers! Thanks for sharing!
Good!! Used fresh raw broccoli instead of frozen and added some red pepper flakes since we like a little heat.
Awesome! Thanks for sharing how it turned out for you, Sara! Glad you enjoyed it!
I loved this and so did my non-keto family!! We have made MANY recipes on your website and it doesnt let us down! We doubled it to freeze one! If you like spice I totally recommend adding Siracha or a hot sauce in to it when you add the cheeses and heavy cream. Sooo yummy! I do have a question though! How long would you recommend cooking the frozen meal? The same time? Thank you!
Great idea on freezing it, Carson Jones! To cook it, I would completely thaw first. Set in the fridge overnight to thaw and cook about 25 minutes when you are ready.
Made this tomite…used .5 pound hot pork sausage and 1.5pounds ground chuck..
I steamed frozen broccoli til it was bright green..5 to 6 minutes…it was really good and filling. Family loved it. Easy recipe and very tasty. Will definitely make again
I’m so glad your family enjoyed this meal!
This was absolutely delicious. I live alone so am freezing individual servings. Itβll definitely be a go-to recipe.
Great idea, Beth! Freezing it will be awesome and less cooking for you!
This is delicious..
I added some mozzerella cheese pearls as well. It.added some chewy cheese pockets…yum..also steamed frozen broccolli for about 3 minutes .
Sounds yummy! π Thanks for letting us know how good yours turned out!
Sooo good!! I threw in mushrooms and shredded carrots just to get rid of some veggies that I had that were going to go bad, and I really enjoyed this! So creamy and cheesy π
Happy to hear how much you enjoyed it, Ms. Megan! πThanks for the feedback! π€
Iβd suggest cooking the beef and onions first, drain then add spices and garlic. Youβll pour all the flavors off and have to re-season later. Great recipe though!
Thanks so much, Leigh!
Tried this tonight and it was absolutely delicious. Definitely a Keto Keeper. Thank you.
YAY! You’re so welcome! ππ
Loved it! Easy and my daughter likes it. I was in a hurry so I just steamed the Broc and added the other on top.
Yay! Thanks for letting us know you both enjoyed it! Glad you could put it together so easily! πβ€οΈ
This is my kind of recipe…easy, quick and nutritious–and filling. I eliminated the beef broth because I just dumped my frozen broccoli onto the meat mixture while it was cooking and it had plenty of moisture already. Used my own mixture of cheeses on hand and it browned nicely in the oven. I often skip the oven and just spread the cheese on top of the hot cooked mixture and put a lid over it till melted and gooey!
That does sound yummy, Helen! π Thanks for sharing how you made yours! Happy you enjoyed it!
I made this last night for dinner. Sorry to say but it was very bland, virtually no taste. I ended up dumping it as it was just not fixable, what a waste.
So sorry to hear you thought it was bland, Linda! Thanks for sharing your honest feedback with us. Others have mentioned using half ground beef and half ground pork for more flavor or you could try adding some additional seasonings. Hoping that might be helpful if you decide to give it another try! π€
GOT IT IN THE OVEN NOW, DOWNSIZED IT FOR 2 BECAUSE FULLY LOADED WOULD BE WAY TOO MUCH. I COULD EAT BROCCOLI DANG NEAR EVERY NIGHT OF THE WEEK. I SURE HOPE I LIKE THIS RECIPE.
Great idea to cut the recipe down a bit for less servings, Amy. Hoping you enjoy! π
This is a great recipe! The only modifications I made were using ground venison and all cheddar because that’s what I had on hand. Hubby loved it. Of course as a carnivore, he loves this keto concept! π We’ll be adding it to the regular lineup. Thanks for the recipe!
You’re welcome, Melanie! β€οΈ Glad you enjoyed the recipe and that your modifications worked well and this casserole will be a regular in your meal rotation. π€ Thank you so much for your kind feedback and for sharing your experience!
I would like to make this recipe, but I cannot stand the taste of cream cheese in savory dishes. Is there a substitute for it? I see so many savory recipes with cream cheese in them. Would you happen to know why?
Hey Carol! Greek yogurt or sour cream could be good swaps for the cream cheese, though they may slightly alter the final texture. It may also work removing it altogether, but may not have the same creaminess.
As for why cream cheese is often used for keto, itβs a good source of fat which can help keep you full. When the final texture isnβt a concern, most recipes will hold up fine with a swap of sour cream, cottage cheese, or Greek yogurt in its place. Hope this is helpful! ππ€
