McDonald's Low-Carb Shamrock Shake

Ingredients

  • 2/3 cup heavy whipping cream
  • 1 cup ice
  • 4 tablespoons (2 oz) cream cheese, block variety
  • 3-4 tablespoons erythritol, confectioners (adjust according to sweet tooth)
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon pure mint extract (adjust according to desired mintiness)
  • xanthan gum, optional (for extra thickening)
  • green food coloring, optional
  • whipped cream for topping, optional

Directions

In a blender, combine the heavy cream, ice, cream cheese, vanilla extract, mint extract, erythritol, and food coloring. Process until smooth, about 30-60 seconds. If you prefer a thick shake, add a dash of xanthan gum (up to 1/8 teaspoon). Pour the shake into one large or two small glasses. If desired, top with sugar-free whipped cream. Enjoy!

Hip Tips:
  • Freeze leftover coffee in an ice cube tray. Then use the frozen “coffee cubes” in place of regular ice for a dynamite mint frappuccino! Add a squirt of sugar-free chocolate syrup, and it’s just like Starbucks Thin Mint Frap! YUM!!
  • Be sure to use pure vanilla extract and pure mint extract for this shake. I tried making it once with imitation and it was BLECK! Typically, I buy mine in bulk to score the best deal!

    Excited to try this…where is the best price on the erythritol confectioners sweetener? I have been using Splenda Naturals variety in my choc/pb keto shakes..and I also know not to over blend 😉

    I’m sorry. I think I’m losing my mind, but what do we do with the 2oz of cream cheese? I’m assuming we put it with the other ingredients but I’m not sure so I want to ask because I don’t want to make it incorrectly. Thanks in advance!
