In a large bowl, add heavy whipping cream, Swerve confectioners sweetener, and vanilla extract. Whip with a hand or stand mixer until soft peaks form about 2 to 3 minutes. Set aside.

In a small, microwave-safe bowl, melt keto chocolate chips and butter in the microwave in 15-second intervals until fully melted. Mine only took a total of 30 seconds!Ā Stir to combine. Let the chocolate cool for at least a few minutes.

Once cooled, slowly pour melted chocolate into the whipped cream and fold gently until completely incorporated.

Divide out into cups or sealable portion bowls and chill for one to two hours before serving.

Top with additional chocolate chips if desired, and enjoy!

    I tried making this the other night and the texture seemed off. The chocolate and whipping cream didnt blend well together.. The only thing I did different was using Lily’s dark chocolate chips… Could that be the cause?

      Hmm, could be as milk chocolate is creamier. Also, maybe next time try to whip it a bit longer and / or be sure to fold the melted chocolate gently into the whipped cream. Hoping these suggestions are helpful!

      I am wondering why you cannot just use cocoa powder and add mini chocolate chips on top or fold into mixture. This is how I do it. It seems to me whipping cream has to stay cold and when u add something hot into it ir will change the texture

        Hi Penny! We found that melting chocolate produces a richer chocolate taste and is closer to a traditional chocolate mousse recipe. You can use cocoa powder but that makes more of a chocolate-flavored whipped cream. The recipe has been updated to include letting the chocolate cool a little before adding it to the whipped cream.

      Hi Deanna! You can try letting the chocolate cool down for a few minutes before adding it to the whipped cream. That will help it blend better. The recipe instructions have been updated as well.

    What else can I use besides Swerve, and how much? I have some liquid Stevia that I don’t know how to use, haha.
