These baked ham and cheese cups are such a healthy make-ahead breakfast idea that’ll make your mornings run a little smoother! Just grab a muffin tin and fill it with ham, eggs, cheese, and any veggies you’d like. Enjoy them right away or as a delicious and easy to re-heat breakfast option later!
1 cup and diced veggies (I used bell peppers, red onion, and green onion)
nonstick spray for muffin tin
Preheat oven to 400 degrees F.
Spray muffin tin with nonstick spray. Place a piece of ham in the bottom of each cup.
Add a little shredded cheese to each cup. Whisk eggs together, salt and pepper to taste, then pour into each cup.
Chop and saute veggies for a few minutes with a small amount of olive oil, and add salt & pepper to taste.
Add a little of the veggies to the top of each cup.
Bake at 400 degrees for about 15 minutes until eggs are set. Makes 12 individual-sized cups.
