All the flavors of a yummy egg roll in a one skillet dinner!

Ingredients
  • 1 pound ground sausage (you could also sub with ground turkey ground beef etc.)
  • 1/2 white onion sliced
  • 4 cloves garlic minced
  • 1 tablespoon Ginger minced
  • 1 tablespoon Soy Sauce
  • 1 small head cabbage shredded or spiralized
  • 8 oz. mushrooms sliced
  • 1 tablespoon sesame oil
  • 1/4 cup chopped green onion

Instructions
  1. Cook ground sausage with sliced white onion in a large skillet over medium heat, making sure meat is crumbled and cooked through. Do not drain.
  2. Stir in garlic, ginger, and soy sauce.
  3. Add cabbage and mushrooms, and stir for a few minutes until softened.
  4. Remove from heat, stir in sesame oil, and top with green onions.

Notes:

  • I used my Spiralizer Vegetable Slicer to slice the cabbage, which made it easy. You can also use a cheese grater, knife, or substitute with a prepackaged coleslaw mix (though they can contain carrots, as seen above, which raises the carb count a bit).

We loved how this Egg Roll in a Bowl tasted and how easy it is to prepare as a one pan stir fry meal!

You can easily add and subtract ingredients to taste. Next time I think I’ll add an egg or two for even more protein staying power!

      Soy sauce is made from wheat, but it’s also typically easier for most people to source, so we used it in this recipe. I typically stick to coconut aminos. Tamari is another fantastic keto-friendly sauce.

    This was super yummy, and I will definitely make it again! BUT I’m confused about the nutriention value, because my app is telling me 1/4 of a small head of cabbage is 6 net carbs, then I verified that with Google. I’ll still learning keto did I miss something? This threw my numbers off today :/
