These Keto Breakfast Sausage Muffins Use Fat Head Dough!

It’s the breakfast of champions!

These delicious stuffed breakfast Sausage Muffins are as delicious as they are low-carb! Even better, this recipe uses the insanely delicious, easy, and popular Low Carb “Fat Head” Dough! We’ve featured this a couple of times in a Fat Head Lasagna and in a Low Carb Pigs in a Blanket recipe.

Tip: If your dough is sticky, try dusting it with a little extra almond flour and place it in the fridge to firm up. I find the longer you keep stirring, it will eventually dry out into a firm ball you can then manipulate.

You’re also going to need about six breakfast sausage patties. I used a package of ground Jimmy Dean brand breakfast sausage, formed patties, and cooked them on the stove. I also chopped up a small amount of onion and bell peppers and sauteed them in the same pan after the sausage. This part is optional and entirely up to you, if desired.

To make, place a sausage patty on top of a flattened piece of dough and set inside a large muffin tin. After it’s baked, the result are these tasty and satisfying bread like stuffed muffins!

Recipe Notes

Recipe adapted from HowToDoThisAndThat.com

My family LOVED this breakfast!

They bake up a little puffy in the oven and have a great texture and taste. I had one this morning, and they still taste great re-heated the next day! You could probably come up with a bacon version that’d be yummy, too.

Such a creative and delicious low carb breakfast idea!
