Homemade Keto Biscuits

Ingredients

  • 1 1/2 cups almond flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons butter, cold and cut into cubes
  • 2 large eggs
  • 1 cup cheddar cheese, shredded

Directions

Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper.

In a medium-sized bowl, mix almond flour, baking powder, salt, and pepper. Cut in butter with a pastry cutter or masher until the mixture is like sand.

Stir in eggs and fold in cheese. Combine until it forms a sticky dough.

Use an ice cream scoop to drop 6 biscuits onto prepared cookie sheet to bake. Bake for 15-20 minutes until cooked and slightly browned.

Remove from oven and set aside to cool or serve slightly warm. Enjoy!

Use this recipe to quickly get some yummy biscuits on the table for an easy side dish. I think they would be a great addition to any dinner feast as a keto alternative to rolls! We actually used these biscuits in our Biscuits and Gravy recipe (SO good!), but you can also use them to make yummy breakfast and lunch sandwiches, too. The possibilities are ENDLESS!

This is such an easy process with simple ingredients. Almond flour makes these keto biscuits grain-free, and cheddar cheese makes them super delicious. I used a cheddar-jack cheese blend I had on hand, and they were YUM. I love that all you have to do is mix up a few easy ingredients, drop them on a sheet pan covered with parchment paper, and bake.

    Curious if these freeze and thaw well? Would love to make ahead of time and thaw them out day before, maybe throw in the oven to warm up right before?

      Hi Celine! We have not tried it but here is some information on swapping flours before you try it. Keep in mind coconut flour is more absorbent so it can make the final product dense & may alter the flavor. Hope this helps❤

    Have you ever tried it with Mozzarella for a more bland taste so it doesn’t over power the sausage greavy or keto jam?

    These are so good. I actually had one right after they came out of the oven. The next day they were even better. Looking forward to making them again today….I was wondering about the breakdown though…when I put the recipe in Carb Manager is shows that the calories are 309 and the net carbs are 3.7 per biscuit.

However I think what might be happening here is a variable in the brands you are using compared to what we used in our test kitchen. It’s so crazy how much macros can vary from brand to brand. I would keep using the macros you calculated since they are specific to the brands you use! Hope this helps❤

    I’m m going to start by saying I’m a newbie when it comes to Almond Flour. I’m not a huge fan of its taste and texture. I think with these, a little more salt added would have been good, but all in all, they helped my bread craving!
