This Easy Cauliflower Fried Rice Recipe is Delicious

If you haven’t yet tried the delicious splendor that is this cauliflower fried rice keto recipe, you’re missing out! It’s a simple idea my entire family enjoys every time I make it.

This recipe is also easy to customize for your family by adding any desired veggies, and it’s a great way to use leftover cooked chicken breast or rotisserie chicken meat.

Please note that while this recipe shows peas and carrots, due to the higher carb counts, keto dieters should omit these from ingredients.

  • 2 eggs lightly beaten
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 teaspoon Ginger minced
  • 2 teaspoons coconut oil or canola oil
  • 1/2 cup chopped asparagus
  • 16 oz. bag of riced cauliflower or one medium sized head of cauliflower riced using food processor or cheese grater
  • 2 tablespoons less sodium soy sauce or Tamari
  • 1 and 1/2 tablespoons sesame oil
  • 2 chicken breasts cooked
  • 3 green onions sliced

Instructions
  1. Heat a wok or large skillet over medium-high heat. Add 1/4 teaspoon of sesame oil.
  2. Add the eggs and quickly cook. Transfer the eggs to a cutting board, chop, and set aside.
  3. Add coconut oil or canola oil to the skillet. Saute onion, garlic, ginger, and asparagus for a couple minutes, stirring constantly.
  4. Add cauliflower to the skillet and stir-fry until the veggies are tender.
  5. Stir the soy sauce and sesame oil into the mixture and add chopped chicken.
  6. Add the egg back into the mixture, and stir well. Taste and add more soy sauce or sesame oil, if desired.
  7. Serve with chopped green onion.

The taste and texture is legitimately DELICIOUS! This is a must try idea that doesn’t disappoint. The re-heated leftovers are yummy, too!
