3-Minute Keto Cinnamon Roll Mug Cake

Ingredients

For the Mug Cake:

  • 2 tablespoons butter, melted
  • 3 tablespoons almond flour
  • 1 egg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1 teaspoon stevia powder blend (Such as Truvia)

For the Glaze:

  • 1 tablespoon butter
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon stevia powder blend (Such as truvia)

For the Cream Cheese Frosting:

  • 1 oz. cream cheese
  • 1/2 teaspoon stevia powder

Directions

Melt butter in a small bowl, mug, or ramekin.

Mix in almond flour, egg, cinnamon, baking powder, and stevia powder.

Microwave on high for 90 seconds. Carefully remove, as it will be hot.

Run a knife around the edges of the mug cake and flip it over onto a plate.

In a separate bowl, melt butter for the glaze and stir in cinnamon and stevia. Pour glaze over the mug cake.

Place cream cheese in a small ramekin and melt in microwave for about 20 seconds or so and add stevia.

Spread cream cheese over the top!

Note on Sweetener:

I used a powdered Stevia blend called Truvia as a sweetener in this mug cake, but you can definitely sweeten to taste with your own sweetener of choice. For example, Collin made this and used two packets of Truvia to sweeten.

    HOW DO YOU KNOW HOW MUCH TO EAT… EXAMPLE BAKED HAM & CHEESE CUPS CAN YOU EAT 2 OR 3?

These cups are pretty filling, so 3 would definitely do the trick, and should only set you back 6 total carbs.Also for this mug cake – servings is 1. Servings are listed under the title of recipe, and that’s how it populates the nutrition label per serving.

    Just curious. Why would you use both a glaze and cream cheese frosting? That sounds like it would be very sweet. I’m diabetic and on a low carb diet, I’ll try to make this where it isn’t as sweet, because I love cinnamon rolls. Can I leave off the glaze and just use the cream cheese frosting by itself.

    Delicious! I didn’t have almond flour so I used coconut flour instead. I’m sensitive to refined sugar (headaches etc) so this was perfect.

    Doubled the recipe, more than enough for three, it’s really lovely, it will be my go to this winter. I left the sweetener out of the cake but used it in the glaze, works perfectly. Thanks for developing and sharing this, it’s a big help. I’m not concerned about the calories when it doesn’t raise my blood sugars

    I have been loving this. Today just realized it has 60 GRAMS of fat!!! I wondered why all of a sudden I had gas all the time. Gall bladders cant take that load all at one time. So just be aware high fat content can trigger a gall bladder attack. I am going to try it again with subbing unsweetened apple sauce for all the fat and see where that lands me. I know that throws it out of keto, which I am fine with. It still gives a protein boost for those of us who dont get a lot of meat.

      I am definitely NOT a recipe maker, but tried it as stated above with unsweetened apple sauce and it was so close to the original. Just needed 1 1/2 T. It lowers the fat by about 20 gms, 40 instead of 60. And ups the carbs …too small to count. So may be a winner for anyone needing to lower fat per serving.

      I used coconut flour because that is all I had. It was so dry that I could not even eat it. I was choking on it. Did I do something wrong or is it really that dry?

    I must be missing something…based on your conversion chart, 1 teaspoon of powdered stevia would be comparable to over a cup of sugar? That doesn’t seem right. That would be a lot for one mug cake, right?

      Yes Shellie! There are roughly 300 calories in the butter, 120 calories in the almond flour, 80 calories in the egg, and 100 calories in the cream cheese. Hope this helps!

    Well it’s definitely not my cinnabon recipe but it’s pretty good. I increased cinnamon and stevia to the glaze and more stevia to the frosting and added vanilla to both. For some reason my Stevia doesn’t seem to sweeten like it should, especially when I add it to my coffee…don’t know what’s up with that. I can add a heaping spoon of it and it doesn’t sweeten it at all…and has a bitter aftertaste…but that’s not your problem. The mug cake is pretty good!!!

    I made this with just the glaze (no cream cheese icing). Loved it but not sure how you got 7gm total carbs. 3 TBSP of Almond flour alone is 7.5gm. I came up with a little over 14gm or am I figuring it incorrectly?

      Hi Linda! It all depends on the brand of almond flour you use. If using Bob’s Red Mill super fine almond flour as pictured it’s only 6 grams of carbs for 1/4 cup with 3grams of dietary fiber. Some brands are higher than others. Hope this helps♥
