Crumbl Frosted Sugar Cookies Inspired This Yummy Keto Version

Crumbl-Inspired Keto Pink Sugar Cookie

To make the sugar cookies:

Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Using an electric mixer, beat together butter and keto confectioners sweetener on high until light and fluffy, about 3 minutes.

Add in the egg, vanilla, and almond extract. Mix until well combined.

Next add the almond flour, coconut flour, baking powder, and xanthan gum. Mix on medium speed until well combined, scrape down the edges as needed.

Scoop out the dough using a 1/4 cup. You'll get six dough balls. If you have any extra dough, divide it between the six dough balls. Place them on the baking sheet and form them into disks. They'll expand slightly during cooking. Bake for 9 to 11 minutes, until just starting to turn golden brown.

Remove the cookies from the oven and leave them on the baking sheet to cool.

To make the pink frosting:

While the sugar cookies are cooling, make the frosting. Using an electric mixer, beat together softened butter and keto confectioners sweetener until well combined.

Add the heavy whipping cream, vanilla, and almond extract. Mix to combine. Once the frosting has a smooth texture, add 1 drop of the neon pink food coloring and mix until the color is evenly distributed. If you want the frosting more pink, add one more drop and mix well.

Generously frost the cookies with the pink frosting. You'll use all of it for the six cookies. Frost the cookies while they're still a little warm. The frosting will melt a little which helps give it a smoother texture. Then place the cookies in the fridge to chill. This is the traditional way to serve them. But you can eat them at room temperature too. Enjoy!

These cookies are giant! And so much frosting. It’s like a dream come true. I’m usually a chocolate person when it comes to desserts but I have a soft spot in my heart for a good sugar cookie!

The key to making these taste like the original Crumbl Pink Sugar Cookies is almond extract. Almond extract is pretty common in sugar cookies and has a strong, bold, yet sweet flavor. It tastes nothing like almonds and kind of reminds me of maraschino cherries.

Tips for making the best keto-inspired Crumbl Pink Sugar Cookies:

  • Make sure you beat the butter and keto confectioners sweetener together really well. This helps create a lighter cookie.
  • Lightly pack the almond and coconut flours when measuring.
  • The cookie dough does not need to be chilled before baking! Yay!
  • If you don’t like almond extract, increase the amount of vanilla extract or replace the almond extract with lemon. Just note that they won’t taste exactly like the original.
  • If you can’t find neon pink food coloring, you can use red, but only use 1 or 2 drops.
  • Crumbl serves their sugar cookies chilled. Stick them in the fridge to cool down before enjoying them, if you can wait that long! I tried it and did like them better straight from the fridge.

These cookies are super easy and they’re much cheaper to make at home. They hardly take any time to make and you probably already have all the ingredients on hand. The hardest part is just waiting for them to chill! I hope you enjoy them as much as I do!
