Baked seasoned cottage cheese and eggs results in a delicious bread or tortilla substitute.
Ingredients
- 1 cup cottage cheese
- 2 eggs
- 1/2 teaspoon green goddess seasoning
- 1/2 teaspoon everything bagel seasoning
Directions

Preheat the oven to 375 degrees. Prep a sheet pan with parchment paper.

To a blender, add the cottage cheese, eggs and Green Goddess seasoning. Blend until smooth, just a few seconds.

Pour the mixture out on a small/medium sheet pan. Sprinkle everything bagel seasoning over the top.

Bake for 35-40 minutes until browned. Let cool and use to make sandwiches or a wrap.

Extra tips for making keto cottage cheese flatbread:
- Don’t skip the parchment paper. This will make sure the flatbread doesn’t stick to the pan.
- Try not to spread the mixture too thin. The first time I attempted this idea, I used a larger sheet pan and it spread out much too thin and broke apart. On my 2nd attempt, I used a 12×10-inch sheet pan and that worked out perfect!
- Season the flatbread as desired. I loved using the Trader Joe’s Green Goddess seasoning! It has salt, onion, garlic, and herbs. Italian seasoning would be great too!

I was curious initially if this recipe would taste too egg-y for me, but honestly, it’s yummy! I don’t love the egg wraps from the grocery store very much, and these tasted better! I love that this flatbread is super versatile and you can season it however you’d like. I was thinking you could cut this into strips and make a lasagna out of it too instead of noodles!
