Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 teaspoon green goddess seasoning
  • 1/2 teaspoon everything bagel seasoning

Directions

Preheat the oven to 375 degrees. Prep a sheet pan with parchment paper.

To a blender, add the cottage cheese, eggs and Green Goddess seasoning. Blend until smooth, just a few seconds.

Pour the mixture out on a small/medium sheet pan. Sprinkle everything bagel seasoning over the top.

Bake for 35-40 minutes until browned. Let cool and use to make sandwiches or a wrap.

Try baking this simple flatbread by blending eggs with cottage cheese to use for various easy keto meals. Pour the bread mixture onto a sheet pan and bake it in the oven. You can season it as desired, resulting in a yummy low-carb way to eat sandwiches, tacos, or pizzas!

Plus, cottage cheese is a great way to add some additional protein to your diet. Using it to make a bread-like wrap is brilliant! On this day I made a delicious turkey, cheese, and avocado wrap. Extra tips for making keto cottage cheese flatbread:

  • Don’t skip the parchment paper. This will make sure the flatbread doesn’t stick to the pan.
  • Try not to spread the mixture too thin. The first time I attempted this idea, I used a larger sheet pan and it spread out much too thin and broke apart. On my 2nd attempt, I used a 12×10-inch sheet pan and that worked out perfect!
  • Season the flatbread as desired. I loved using the Trader Joe’s Green Goddess seasoning! It has salt, onion, garlic, and herbs. Italian seasoning would be great too!

I was curious initially if this recipe would taste too egg-y for me, but honestly, it’s yummy! I don’t love the egg wraps from the grocery store very much, and these tasted better! I love that this flatbread is super versatile and you can season it however you’d like. I was thinking you could cut this into strips and make a lasagna out of it too instead of noodles!

    I want to meal prep my lunches. Can you make multiples ahead of time and keep in the fridge? If so, how long do you think they’ll keep for?
