Prep the air fryer with a sheet of parchment paper. Create 3 thin circles with the avocado mixture on the paper.

Cook in the air fryer at 400 degrees for 18-20 minutes until toasted and browned. Let cool and use as "toast" or as a tortilla like I did to build a taco. Enjoy!

Here’s a unique and clever bread or tortilla replacement!

The next time you have an over-ripe avocado, don’t toss it. Instead, mash it up with cheese and an egg to create a brilliant low-carb “bread”. We first saw this 3 ingredient avocado bread idea from Instagram user @colorfulfoodie, and I am so glad I tested it out myself!

Avocado bread is such a versatile idea. I love that this could be incorporated into breakfast, lunch, or dinner. You can use them as a vehicle for eating eggs and bacon in the morning, or consider using one to build a taco or tostada like I did. I found myself with some leftover steak and chopped it up with onion, tomato, and cilantro for a delicious meal.

I love how the outside gets nice and crisp from the air fryer and cheese. The taste is flavorful and delicious.

Extra tips for making 3-ingredient avocado bread:

  • You can bake these in the oven as well at 400 degrees for 20-22 minutes until golden brown.
  • Whether you use the oven or air fryer, be sure to use parchment paper to avoid any sticking.
  • I used a Mexican blend of shredded cheese and an Italian blend as that’s what I had on hand. Feel free to use your desired type of cheese!
