These Keto One-Minute Microwave Nachos are Crispy!

One-Minute Keto Microwave Nachos

yield: 4 SERVINGS

Ingredients

  • 4 deli cheese slices, cut into triangles/fourths
  • 1 cup ground beef taco meat, prepared
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup onion, diced
  • 1/4 cup tomato, diced
  • 1/4 cup cilantro, chopped
  • 1 small avocado, diced

Directions

Cover a plate with parchment paper. Do not use wax paper.

Slice two pieces of cheese into 8 total squares, and place onto a microwavable plate, leaving room between squares for spreading.

Microwave for 60 seconds on high. Let cool, and cheese should turn into crisps. Repeat process with another two slices of cheese.

Place all 16 cheese "chips" onto a plate and top with ground beef and shredded cheese. Microwave for about 20 seconds until shredded cheese is melted.

Add additional toppings like onion, tomato, avocado, cilantro, etc., as desired. Makes 16 nacho chips.

These keto microwave nachos use chips made from just cheese! Super simple.

Check out these easy microwave nachos, using just cheese as CRISPY chips! They are a delicious snack and take just one minute in the microwave! Use them as a base for piling on all your yummy nacho fixings such as ground beef, shredded cheese, avocado, chopped tomatoes, onion, and cilantro.

Use cheese slices to make these keto microwave nachos.

The secret for getting crispy “chips” is to use American cheese slices such as the Kraft Deli Deluxe brand I am using here. They spread out, sort of puff up a little in the microwave, and then become crispy. You can use a different thinly sliced cheese, but the results may not be as crunchy!

    Do you make the “cheese chips” prior? If so do you bake them? I live in Indianapolis and this is the HUGE RACE/PARTY weekend and I am on a roll and feeling so good on KETO….. I want to do my best to stick to things 🙂 Thanks

    If meal prepping, how would you suggest the cheese chips be stored and how long will they be good for?

      Hi there! The cheese chips alone are just slices of American cheese. You may want to check the packaging on your cheese slices for those macros, as it varies by brand. Hope that helps!

    My chips didn’t come out crispy – what did I do wrong? I used Velveeta jalapeno 40 calorie sliced cheese – would that have made the difference?

      The consistency of velveeta is too soft to create a crisp chip. You also want to be sure you use parchment paper.

    I’m not sure why but with parchment paper they wouldn’t crisp up. On a paper plate with Pam spray they were great! I ate them plain and with guacamole! Thanks for the idea!
