Keto Sweet Dinner Rolls

Ingredients

  • 1 1/2 cup shredded mozzarella cheese
  • 2 oz. cream cheese
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 cup grated parmesan cheese
  • 2 teaspoons monk fruit sweetener
  • 2 eggs
  • 2 tablespoons melted butter
  • 1 egg white (for egg wash)

Directions

Preheat oven to 350 degrees Fahrenheit. Grease cupcake pans to avoid any sticking and set aside.

In a large microwavable bowl, add in mozzarella and cream cheese. Microwave in 30-second intervals until cheese is completely melted.

In a medium-size bowl add almond flour, coconut flour, baking powder, grated parmesan cheese, and sweetener and mix well.

Once the cheese is melted, add dry ingredients and mix. Then add in eggs and 1 tablespoon of melted butter and mix well until all is kneaded together.

Scoop out dough with an ice cream scooper (about a 2" ball) and roll until smooth. Place in cupcake pan until the dough is divided.

Brush rolls with an egg wash to give a nice golden brown color before placing in the oven to bake for 12-14 minutes.

Remove from oven and brush 1 tablespoon of melted butter over freshly baked rolls. Serve and enjoy!

Who doesn’t love that perfect savory-sweet dinner roll just like the ones you’re served at a restaurant or those King’s Hawaiian rolls you buy at the store? 😋 Now you can make them at home and it’s actually easier than you’d think. The best part? These dinner rolls are keto and have just 2g net carbs per roll!

If you’re missing bread, you’ve got to make these!

You may see the words “homemade keto dinner rolls” and think this recipe will be confusing and complicated, but I have eliminated a lot of the typical steps. As long as you can mix and knead, you can make these delicious dinner rolls for your next gathering, and wow your guests in under 30 minutes.

Hip Recipe Tips:

    • After several attempts making these using pineapple oil, I realized that the flavor of cheese and pineapple wasn’t the greatest combination. I decided to sweeten the rolls up with 2 teaspoons of monk fruit instead and some good ol’ butter.
    • There’s no rise time required for these rolls, so as soon as you mix the ingredients together you can pop them directly into the oven. So easy!
    • We recommend using pre-shredded mozzarella cheese or shredding a firmer cheese brick, rather than using fresh. The moisture in the fresh mozzarella can cause excess stickiness in the dough.
    • During holidays or larger gatherings, I often find that all my baking sheets are being used, so I use cupcake pans as my go-to for rolls. Perfect portions and easy to pop right out.

    I was just wondering because I haven’t researched this myself, but is yeast permitted on the Keto diet and would it work in the breads? Just curious.

      Yes! Yeast can be used on Keto. Our recipes don’t contain yeast as they are more quick and easy to make. Hope this helps!

    Hi, this sounds really good. I generally do not care for the flavor that coconut flour brings to dishes. I read the ‘flour’ page (also good stuff!). What I didn’t find is if/how I would use all almond flour, substituting it for the coconut flour in this recipe? And, once subbed to all almond flour, would the recipe still work? Thanks in advance for a reply.

      Hi Dan! You could sub almond flour but this would change the flavor & texture and possibly would not be close to the original recipe. The coconut is added not for flavor but for texture in this recipe. It is such a trivial amount that you may not notice it. I have personally made this recipe and could not taste any coconut. If you omit the coconut it would be more of an almond flavor & a different texture. We do have a bagel recipe that could be made into rolls that you may want to try too! Hope this helps❤
