Add coconut milk and butter into a medium saucepan. Bring ingredients to a boil over medium heat for 10 minutes, stirring regularly to prevent scorching.

If you’re wondering, condensed milk is often used in baking such as pies, cheesecakes, fudge, and ice cream. It can also be used for something as simple as a fruit dip or even as a sweetener for your coffee.

Manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water. I’m sure you’re asking yourself why the manufacturers did this. Well, they experimented and added sugar to the condensed milk and found out that the shelf life held longer, plus transporting the milk was easier due to not having to store it in cooler temperatures.

Standard canned condensed milk contains 90 calories, 15 carbs, and 15 grams of sugar PER SERVING. This keto recipe has under 1g net carbs and barely any added sugar. It’s a win-win for all of your baking needs!

  • Why use canned coconut milk in place of unsweetened almond milk? Coconut milk is thicker, so it doesn’t have to boil as long to thicken. It’s also got a better flavor for this recipe.

        Could you use regular swerve or another brand granular sugar replacement sweetener? Does it have to be confectioners?

          The granular sweetener will not dissolve but if you have a coffee grinder whizz it up in there and then you will have powdered sweetener

      Yes, but you’ll want to dilute it first. For every 2 Tablespoons of coconut cream, you mix 3/4 cup of water to make coconut milk.

    Hello, I made this using powdered erythritol and it’s delicious but after a while on the counter the sugar crystallized and it became lumpy. I know I can heat it up to make it smooth again but I want to use it to make chocolate fudge. Will the sugar crystallize again in the fudge?

      Erythritol likes to crystalize during the cool-down process. Unfortunately, in this recipe, it will crystallize in the fudge again. Swerve is 70% erythritol and is a better choice. The best way to use erythritol in this recipe is to mix it with another keto sweetener.

      YES! That should work for this, Celyne! ❤️🙌 I did check with the team on this and we recommend using 4-5 drops of a monk fruit extract, and if you find you’d want it a touch sweeter, you can add more to taste. The keto condensed milk may be slightly thinner than our original recipe, as the powdered sweetener does help with the thickness, but we don’t think it would be too drastic of a difference. Enjoy! 🤗
