Make This Keto Slow Cooker Chicken Salsa Soup Tonight!

If you’ve got picky eaters like me, try this delicious and easy-to-make keto chicken salsa soup recipe! It features slow-cooked chicken, lots of taco seasoning, and both cream cheese and shredded cheese.
In the end, you’ll have a comforting, cheesy soup with lots of Mexican-inspired flavors sure to satisfy your hungry family any day of the week.

Even on crazy days, you can make this soup with minimal prep time!
If I know my evenings are gonna be chaotic, I’ll plan on easy ideas like this one to get me through. You can use chicken breast meat or even chicken thighs if preferred, and just layer the cream cheese, spices, chicken broth, and a can of Rotel over the chicken.

- You could use a taco seasoning packet in a pinch, but to keep things really low-carb and unprocessed, consider making a batch of this delicious keto homemade taco seasoning. - Once cooked, you’ll want to remove the chicken to shred it. If the cream cheese looks unappetizing, no worries! Just grab a kitchen whisk and really mix the broth well, making sure to break apart any smaller pieces of cream cheese.

- If you’re curious about my favorite way to shred meat, I use these handy Bear Claws meat shredders to easily shred chicken.

- Place the shredded chicken back into the slow cooker and add shredded cheese to the soup. From there, I add a bag of steamed riced cauliflower right before serving to give my soup some extra veggies and bulkiness. This is yummy (but you can omit if it doesn’t sound delish to you).
Keto Slow Cooker Chicken Salsa Soup

A creamy taco seasoned soup with lots of shredded chicken, seasonings, and cheese.
Ingredients
- 2 pounds chicken breasts, raw
- 8 oz cream cheese, cubed
- 1/2 cup onion, chopped
- 2 teaspoons minced garlic
- 1/2 cup fresh cilantro, chopped
- 10 oz. can Rotel tomatoes and green chilies
- 2 tablespoons taco seasoning from a packet or homemade (recipe HERE)
- 1 teaspoon ancho chile powder
- 1/2 teaspoon salt
- 4 cups chicken broth (32 oz)
- 1 and 1/2 cups Mexican blend cheese, shredded
- 10 oz. steamed riced cauliflower (optional)
Directions

In a slow cooker: layer chicken breasts, cream cheese, minced garlic, chopped onions, taco seasoning, ancho chile powder, salt, Rotel, cilantro, and then pour in the chicken broth.

Close lid and cook on HIGH for 3-4 hours, or LOW 6-7 until chicken is tender and falls apart easily.

Remove chicken and shred. Use a kitchen whisk and really mix the broth well, making sure to break apart any smaller pieces of cream cheese. Now add the shredded chicken back to the pot.

Mix in shredded cheese and a bag of frozen riced cauliflower that's been steamed in the microwave (optional).

Serve with any keto friendly topping like guacamole, avocado, jalapenos, extra cheese, etc.

Okay. I have it in the crock pot right now. Excited to try it! How long will this keep in the fridge? Is it good after it has been frozen? I’m the only one in my family who will eat it.
Hi Sarah! You could keep it up to 3 days or so in the fridge. It should freeze well, but if it looks like cream is separating when defrosted, just whisk or mix with blender. Hope that helps!

Wondering if their a way to do this soup with my Instant Pot using pressure.
I would, but you wouldn’t add the cheese until it’s done. You don’t put the cheese in under pressure however, once it’s done you can put it in and the heat will melt it.
We hold off on the shredded cheese til the end, correct? Cream cheese you still add at the beginning…right? Can’t wait to do this in the instant Pot. I’ve already done this in the crock pot and the family loves it!

I would not recommend that, but you can use 1 cup heavy cream instead.

This is seriously the most amazing soup. I am NOT a fan of rotel or chunks of tomatoes so i also use an immersion blender before i add the chicken. It’s creamy and amazing. The fact that you throw everything into a crockpot and let it cook is a huge bonus. The easiest and most delicious soup EVER!

This soup is AMAZING and so easy! I have also made this on the stovetop with a few tweaks and it’s just as good. It also freezes really well. I love tomatoes, so I always use 2 cans of Rotel. If I take a batch to work, I usually add corn and black beans for the non-keto crew. This soup turns out delicious every time! Thanks for sharing!
