Ready those Crockpots!

A delicious, hearty meal doesn’t need to require a ton of leg work. In fact, this comforting keto Mississippi Pot Roast cooks in the Crockpot so you don’t have to spend your day monitoring the stove! Better yet, it’s low-carb while still being super filling and flavorful.

Nope, that’s NOT a potato!

My friends, I think we’ve all been forgetting about the humble radish and just how versatile this root vegetable can be without being carb-heavy.

I’ve swapped out the traditional potato component for this dish with peeled radishes and the results are uncanny. I swear you’ll have to think twice that you’re not actually eating nuggets of starchy potatoes!

bowl of peeled radishes

I gave mine a rough peel but honestly, you could probably get away with not peeling at all. In fact, it would give the dish more of a red potato vibe, still fooling your non-keto diners.

Want to skip the radishes all together? That’s totally fine too! Another comfort food option would be to serve the melt-in-your-mouth roast over mashed cauliflower. YUM!

As if this meal wasn’t already simple enough, you could take it a step further with your cleanup. Given it’s a one-pot meal, it’s really already a cinch, but to make it even easier, try out these Crock-Pot Slow Cooker liners that let you toss all the mess away.

My Hip sidekick Jenna gave this recipe a try and here’s what she thought:

“This is my favorite way to make a pot roast and I love the potato flavor the radishes take on. I think peeling really gives them more of a potato vibe. To really take this up a notch, I’m going to add more of the juice from the peppers next time. YUM! This recipe turned out so great!”

Sounds so delicious. I am going to try this recipe! Thank you!!

    • Collin (Mrs. Hip)

You’re very welcome, Aria! Hope you love it!

  2. Jlee

Have made this 3 times and it’s been a huge hit with even the non-Keto family members. Who knew those radishes would be so delish! I’m just wondering if it is really necessary to peal the radishes? Does leaving the skin on change the taste?

    • Amber (Hip Sidekick)

Yay! Happy to hear it was a hit with everyone! You can leave the skin on. We had peeled them off as a preference.

    • Olgraygirl

My mouth is watering–this will happen at my house this week!! Thanks for another good one!

      • Angie (Hip2Keto Sidekick)

Hi there! I hope you enjoy this easy fall meal❤ It’s in rotation at our house! So glad you are loving all the recipes! ❤

    • Janet

No need to peel the radishes. They are great.

      • Angie (Hip2Keto Sidekick)

Hi Janet! Thank you for the hip tip❤

    • peachy

You absolutely do not need to peel the radishes. I just slice off a very thin slice on the top and bottom

  3. Larry

Have you tried speeding this up and cooking in an Instant Pot ?

    • Jennifer (Hip Sidekick)

I love using my Instant Pot and this is definitely something that could be cooked in one!

      • Jaymi

Any suggestion on how in the instant pot? I’m not quite a pro yet with it.

        • Angie (Hip2Keto Sidekick)

Hi Jaymi! You can saute the meat ahead of time and then just throw it all in on high pressure for 35 minutes. Easy peasy! Hope this helps❣

  4. patriciagreer

I made this last Sunday, both my husband and I were so impressed with the potato/radishes. The whole meal was delicious. 5 out of 5 for us.
Happy to see it is on this week’s dinner menu.

    • Collin (Mrs. Hip)

Woohoo! SO glad to hear you both enjoyed it! Thanks a ton for your feedback! 🙌

  5. Annisa

If I cook on high in slow cooker would I do 4 or 6 hrs?

    • Angie (Hip2Keto Sidekick)

Hi Annisa. Each slow cooker is different however I would check it after 4 hours. It may not be as tender because of the lesser time though. Hope this helps❤

  6. gloria guffey

can you use turnips instead of radishes

    • Amber (Hip Sidekick)

Yes! That should work, but it won’t be as low carb.

  7. Kathleen Nash

Are you suppose to just use the beef base and rub it on the meat or are you suppose to mix it with 8 oz of boiling water as called for?

    • Angie (Hip2Keto Sidekick)

Hi Kathleen! You just drizzle the beef base over the chuck roast. Hope this helps❤

      • Linda

What do you mean by beef base. I think of Better Than Bouillon and it’s a paste so it doesn’t drizzle.

        • Amber (Hip Sidekick)

Hi Linda! The beef base is a concentrated stock that has a thicker consistency more like a syrup. I did search around a bit and it does look like it can also come in a paste or powder as well. Hope that helps!

  8. Blondie_B

AMAZING!!!!! I’ve never had radishes as potatoes and my boyfriend couldn’t tell the difference!!! Love this!!

    • Jennifer (Hip Sidekick)

I’m so glad you loved them and your boyfriend ate them, too!

  9. Andrea Huck

I am very new to Keto – and am oddly obsessed with radishes, so when I discovered this recipe I immediately ordered and picked up all the ingredients and it is cooking in my crock-pot right now…. I CANNOT wait for dinner 🙂

    • Collin (Mrs. Hip)

      Woohoo! So awesome! Enjoy! 🙌
