Best Keto Buns – Crusty Outside and Soft Interior!

Ingredients

  • 2 cups shredded mozzarella cheese
  • 2 oz. cream cheese
  • 3 eggs, room temperature (1 of the eggs for an egg wash)
  • 1 1/2 cups almond flour
  • 1 tablespoon baking powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt

Directions

Preheat oven to 400 degrees. Line baking sheet with parchment paper for easy cleanup.

In a large microwavable bowl, add shredded mozzarella cheese (don't shred your own mozzarella because it will have more moisture) and cream cheese. Melt in 20-second intervals and stir. This should take around 40 seconds, but may take longer depending on your microwave settings.

Once you have stirred cheese together, add 2 room-temperature eggs, almond flour, baking powder, salt, and Italian seasoning. Stir to incorporate all ingredients together.

Divide into 4 sections and form hamburger-sized buns on the baking sheet. Wetting your hands slightly will help prevent sticking when shaping. Sprinkle extra Italian seasoning on top if desired.

Make egg wash by adding a whole egg with a dash of water. You could also use two egg whites instead of one full yolk. Set aside.

Bake buns for 20 minutes. Halfway through baking, brush egg wash over the buns to get a nice golden texture. Once baked, remove from oven and let cool completely before slicing open. Enjoy!

Don’t get me wrong, I love lettuce and cabbage wraps as a keto-friendly serving option, but sometimes I miss my burger buns. That’s why I’m sharing how you can make keto buns with a crusty outside and a soft interior for hamburgers, sandwiches, or just to eat on their own!

Better yet, you can dress this bun up any way you want, like with Sloppy Joes! 🤤

These keto buns can even be frozen in a bigger batch as a time-saving option. I recommend slicing them in half prior to freezing so it’s easier to take them out of the freezer and toast when you’re ready to enjoy a delicious sandwich without carb-heavy bread!

Hip tips when you’re ready to tackle our keto buns recipe:

  • Making keto bread requires the ingredients to be at room temperature. To help with the rise of the buns, make sure the eggs have had enough time to warm up to room temperature.
  • Make sure your baking powder is fresh! If you’re using baking powder and your recipe isn’t rising as it should, your baking powder might not be active.
  • We’re usually big fans of shredding our own blocks of cheese, but pre-packaged shredded cheese will work better for this recipe due to the excess moisture from fresh mozzarella, so we highly suggest buying pre-shredded.
  • These are freezer-friendly buns: Make a batch (or double) and let the keto buns cool completely. Slice in half (if planning to use them as a sandwich in the future) and store them in a freezer-friendly bag.

    I made these and instead of the italian seasoning & salt I used same amount of them but used everything bagel (not on top but mixed in) the only issue I had they didnt rise enough but all of my ingredients were not room temp will do that next time. But besides that they are DELICIOUS, even my daughter said they are the best yet. I heat it up on the toaster oven…yum! Thank you for this recipe.

      Overnight, I can leave mine covered on the counter. But I wouldn’t go longer than that as they can go bad fast. You can freeze them as well.

    I just made these. They were excellent. I had flattened them to what I thought would fit the burger, but then as they baked they flattened more, so next time I will just leave them alone and think that will do the trick. Lol.     Just under 500 calories for a bun. That would make a sandwich in the neighborhood of 700 or800 calories. Even on Keto calories matter.

    Hi! Im pretty new to low carb/keto lifestyle. Im trying out new recipes to replace old carb filled choices and not really hard core keto or anything. When I look at the nutrition information, I see that these buns have 497 calories! That seems like a lot. Are we kind of switching out carbs for calories? I am new to the lifestyle so maybe I don’t get the way it works yet, but it seems like a lot of calories for 1 hamburger bun.
