Keto Biscuits and Sausage Gravy

Ingredients

For the Biscuits:

  • 1 1/2 cups almond flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons cold butter, cut into small cubes
  • 2 large eggs
  • 1 cup cheddar cheese, shredded

For the Gravy:

  • 1 pound ground breakfast sausage
  • 1/2 teaspoon dried sage
  • 3 oz. cream cheese
  • 3/4 cup heavy cream
  • 1/2 cup water
  • 1/2 teaspoon xanthan gum
  • salt & pepper to taste

Directions

Preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper or use a silicone mat.

To make the biscuits:

In a medium-sized bowl, mix almond flour, baking powder, salt, and pepper. Cut in butter with a pastry cutter or masher, until the mixture is like sand. Stir in eggs and fold in cheese. Combine until it forms a sticky dough.

Use an ice cream scoop to drop 8 biscuits onto prepared cookie sheet to bake. Bake for 15-20 minutes until cooked and slightly browned. Set aside to cool.

To make the sausage gravy:

While biscuits are cooking, crumble the sausage into a skillet and cook through. Season with sage.

Now melt the cream cheese in the skillet, and whisk in heavy cream, water, xanthan gum, salt, and pepper. Bring sauce to simmer, and then reduce heat to let the sauce thicken. Serve sausage gravy over the biscuits.

    Just made the biscuits to go with a soup we are having for dinner. Wanted to try the biscuits first, just so I would know what to expect in time and taste. I actually got 8 biscuits out of the mix. After trying one, I know they will be perfect for the gravy, but on its own needs a little bit of sweetener and maybe a pinch of garlic. With salted butter it was okay. So I think I will be saving them for the morning and just make what is originally intended for. Overall excellent, it did not take long to prep at all!

        Had the biscuits with the gravy recipe and OMG, my man loved it! Biscuits and gravy is his FAVORITE breakfast, so if it pleased him, you know its a winner! I have only ate biscuits and gravy 4 times in my life, so I really had nothing to compare to, but it was delicious and so filling I skipped lunch! I added a little bit of chicken broth because I (oops????) added to much xantham gum and needed to “gravy” it ??, but it was still delicious (I actually tasted it a bit while it simmered, really no difference, was really happy about that)!

    Would almond flour work instead of the xanthan gum, reason I’m asking is to save on the money? Don’t see much of a use for that other than this?
