Ingredients

  • 2 lbs. beef stew meat or chuck roast, cut up into 1" pieces
  • 2 tablespoon coconut flour
  • 1 tablespoon xanthan gum
  • 2 to 3 teaspoons salt
  • 1 tablespoon garlic, minced
  • 2 tablespoon Kerrygold butter
  • 1 cup mushrooms, chopped
  • 1 cup radishes, diced
  • 1 cup jicama, diced into 1/2" cubes
  • 1 cup green beans
  • 1 cup celery, chopped
  • 1 small onion, chopped
  • 1 tablespoon Worcestershire or coconut aminos
  • 1 tablespoon dijon mustard
  • 1 teaspoon rubbed sage
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 tablespoon pepper
  • 3 cups organic beef broth
  • 1 tablespoon tomato paste

Directions

In a large bowl, add in 1" cuts of stew meat, coconut flour, salt, and xanthan gum, then toss. You want the stew meat to have a nice coating of flour.

In a large skillet, melt butter and garlic. Once butter is melted, add in floured stew meat over medium heat and sear for about 2-3 minutes.

While stew meat is searing, add all remaining ingredients to slow cooker.

Once the stew meat is seared, add to slow cooker and stir. Set slow cooker to low and cook for 6-8 hours.

Add more salt and pepper to taste if desired. Serve and enjoy!

‘Tis the season for keto soups and stew recipes!

This savory low-carb stew is the perfect keto dinner idea for colder nights. Made with tender chunks of beef and fresh vegetables, this stew is packed with hearty flavors. With beef stew, you usually toss your meat in all-purpose flour to have a creamy broth but with this low-carb version, we use coconut flour to get the same effect.

After several hours in the Crockpot slow cooker, the stew is ready when you are with minimal effort on your end!

Hip tips for making this keto beef stew recipe:

  • Sear meat first to really seal in the flavor before adding it to the slow cooker.
  • Slow and steady wins the race—cook on low for 8 hours to tenderize the meat and let all the flavors develop.
  • I used fresh vegetables, but a bag of frozen mixed vegetables will do the trick and save you even more time while prepping. You can even switch up the recipe and add any veggies you want to suit your family’s tastes. Here are some of the best and worst vegetables for the keto diet.
  • In full transparency, I did throw some carrots in this recipe as my family loves them. 🤷‍♀️ They can easily be omitted to keep this recipe lower carb, though a 1/2 cup of chopped carrots would add just under .5g net carbs per bowl.

    Do you think this will work in the instant pot?

      Yes! I would totally make this in my Instant Pot. By looking at the list of ingredients, I would make sure you had an 8 quart IP to cook in. For me, I’d sear the meat on the Saute function instead of using a pan. Follow the instructions (from the recipe) on the meat coating it first and using garlic/butter. After that is done, I’d add all my ingredients and pressure cook for 60 minutes to really get the flavors to mix together and the meat tender. Let us know how it turns out, Lori!

      Yes it would very well….just a lot faster! I make traditional beef stew in an electric pressure cooker in 35 minutes total cook time

    Can you use almond flour vs coconut flour?

      You could, but make sure it’s super fine due to the texture of almond flour verses coconut flour!

    I made this today as my husband is diabetic & I substituted Jicama with Rutabaga (store didn’t have any). Plus added 1 tablespoon of Better Than Bouillon Roast Beef Base. I also used the whole 6 oz Tomato Paste can. I didn’t have Oregano so I substituted it with Italian Seasoning. It smelled so amazing & my husband is so happy as he hasn’t eaten stew due to not able to eat potatoes (high potassium) in years….

    I cooked bottom round steak with rutabagas, onions, radishes, & celery in the crockpot yesterday. I seared the meat without flouring it. I used about 1 1/2 cups of liquid (beef broth & water). After cooking, I removed the meat & veggies from the crockpot, and took out the liquid. I mixed 1/2 tsp xanthan gum with the liquid, on the stove top to make a gravy.
