Frozen Cauliflower Rice One-Pot Meals, Made 3 Ways

Ingredients

1. Chicken Pesto Cauliflower Rice:

  • 2 teaspoons olive oil
  • 8 oz. bag of frozen cauliflower rice
  • 4 tablespoons prepared pesto sauce
  • 3 oz. grilled chicken, sliced
  • 1/4 cup chopped tomatoes
  • Optional garnish: fresh parsley & shredded parmesan cheese

 Chicken Pesto Cauliflower Rice:

 

    1. Heat a skillet on the stove to medium/high heat with 2 teaspoons of olive oil. Add the cauliflower rice and saute for about 4-5 minutes until tender.
    2. Stir in the pesto, chicken, and tomatoes for a minute until everything is warm. Garnish with a bit of fresh parsley and parmesan cheese if desired, and serve.

Alfredo Mushroom Cauliflower Rice:

 

    1. Heat a skillet on the stove to medium/high heat with 2 teaspoons olive oil. Add the onions and mushrooms and saute for a couple of minutes until tender. Set those aside.
    2. Now add 2 more teaspoons of olive oil and add the cauliflower rice to skillet. Sautee for about 4-5 minutes until tender.
    3. Turn heat to low. Stir in the alfredo sauce, green beans, and the cooked onions and mushrooms. Sprinkle with a dash of salt and pepper as desired and garnish with a bit of fresh chopped parsley and parmesan cheese (optional).

Taco Cauliflower Rice:

 

    1. Heat a skillet on the stove to medium/high heat with 2 teaspoons olive oil. Add the cauliflower rice and saute for about 4-5 minutes until tender. Season the rice with Goya seasoning.
    2. Turn the heat to low, mix in the beef, salsa, cheese, and cilantro, and enjoy!

Optional garnish ideas can include hot sauce, sour cream, fresh cilantro, and avocado.

Hip Cauliflower Rice Cooking Tips: 

    • These ideas are all very adaptable to meat and veggie add-ins you may already on hand like leftover taco meat, grilled chicken, or a rotisserie chicken. It’s a great way to use up any odds and ends in the fridge. Use these cauliflower rice recipes as inspiration and feel free to tweak and season to taste!
    • I like to defrost frozen rice on the counter for about 15 minutes ahead of time, and then squeeze out some of the excess water before adding it to the pan. You could also instead microwave it for 30 seconds or so. I open the package, twist the top part, and then squeeze down. The moisture goes to the top and you can pour it out.
    • Try to wait to the end of cooking to season cauliflower rice with salt. That way it’s less likely to become soggy, as salt tends to draw out moisture.
    • My bag of cauliflower rice was 8 oz. and made a pretty decent meal for 2 servings. Our recipe tester was also able to use a bit larger 12 oz. bag, and stretch it to 3 servings or 2 larger servings.
