For Version #1 - 2 Ingredient Pizza Roll-Ups:

Preheat oven to 400 degrees.

Line a cookie sheet with parchment paper. Place sliced cheese (shredded works, too) on parchment paper to avoid any sticking. Put in the oven for 6 minutes or until cheese slices start to brown around the edges. Remove from the oven.

If desired, sprinkle Italian seasoning on melted cheese and add as little or as much pepperoni as you would like. I did 3 mini slices per cheese slice.

Give the cheese about 2 minutes to cool, then gently roll them up and serve. Enjoy!

For Version #2 - Low Carb Tortilla Pizza Roll Ups: 

Heat a nonstick skillet to medium heat. Add pepperoni and then cheese to the middle of the skillet.

Let the cheese melt for about 30-90 seconds, and then add the tortilla. Use your hand to press down and twist so the cheese is secured to the tortilla.

Flip the tortilla over onto a cutting board, add the sauce, and a little Italian seasoning. Roll up the tortilla, cut it in half, and enjoy!

We have two different ideas on how to get cheesy pizza vibes while living low-carb:

  • The first idea uses your oven to melt cheese slices on a baking pan. Then you add some pepperonis, roll them up, and dip them in pizza sauce!
  • The second is a cool skillet hack where you melt pepperoni and cheese in a skillet and add a low-carb tortilla on top. Add sauce and roll it up for amazing keto pizza rolls!

These keto pizza roll-ups are one of our most popular recipe hacks! They’re really easy and quick to make – and oh SO good. When those pizza cravings hit, you’ll be set with this recipe. It hits the spot, and all you need is a couple of basic ingredients that you may already have on hand. If you’ve got cheese and pepperoni (and a low-carb tortilla for Version  2), you can make keto pizza roll-ups! 🍕

This recipe is extremely versatile because whatever pizza toppings you love would make great additions to this simple pizza canvas!

Hip Tips for making easy keto pizza roll ups:

  • I used sliced mozzarella and sliced provolone but you can use whatever cheese slices you already have in your fridge. Make sure you let the cheese cool slightly before removing it from your baking sheet to make it easier to handle and roll.
  • Adding a sprinkle of Italian seasoning gives it the pop of pizza flavor.
  • Not a meat eater? No problem! Try using green pepper, onion, thinly sliced mushrooms, and tomatoes. The topping options (or should we say filling options) truly are endless!

    These are great- my suggestion is use a silpat Matt instead. The first batch I made, I tossed because it wouldn’t come off the parchment paper. With the silpat, easy peasy!

    It sounds like an awesome recipe, but I would not use the pepperoni, because all the ones I have found has some sort of sugar in them.

      Hi Cheryl. Sugar is usually part of the curing process for most processed meats. However it usually leaves trace amounts and doesn’t have a huge impact on the overall carb count. I can understand why you may want to avoid it though❤ It certainly would work without pepperoni! Enjoy!

    I did a variation of this for lunch and it was delicious! I used provolone cheese. It took a couple of more minutes to get the golden edges. I used a pizza seasoning from Amazon that I love. The pizza sauce I incorporated as a layer on top of the melted cheese. Added some spinach and shredded chicken and then rolled. Placed back in the oven for a few minutes.
