Keto Ground Beef Casserole w/ Broccoli

Ingredients

  • 2 pounds ground beef
  • 1 small onion, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 oz. (1/2 of a block) cream cheese
  • 3/4 cup heavy whipping cream
  • 1 1/2 cup mozzarella cheese, divided
  • 1 1/2 cup cheddar cheese, divided
  • 1/2 cup beef broth
  • 12 oz. bag frozen broccoli

Directions

Preheat the oven to 425 degrees.

In a large cast-iron skillet, add the ground beef, chopped onion, garlic, and cook completely. Drain and add back to skillet, along with the Italian seasoning, salt, and pepper.

Next add in cream cheese, heavy cream, 1 cup of mozzarella cheese, 1 cup of cheddar cheese, beef broth, and stir. Let simmer for about 5 minutes on low heat.

Add in frozen broccoli, then give it a quick stir. Add remaining shredded cheese on top, and cook in the oven for 20 minutes.

Remove once slightly browned and bubbly on top. Serve warm and enjoy!

    I made this last night and it is delicious!
    The only thing I may do differently next time would be to cook the broccoli a bit before adding it, so that it is a bit softer.
    Other than that this is a 10/10!

    Can you cook it in something other than a cast iron pan?

      Yes! You would just saute the beef in a non stick skillet and then assemble in a casserole dish.

      Here is the suggestion for making it ahead of time – “Make this ahead of time by using a non-stick skillet to sautรฉ the beef and assemble the ingredients in a 9ร—13 foil pan. Cover and pop it in the freezer until youโ€™re ready to bake.”

    Bf and I LOVED it! I didnโ€™t have whipping cream so I substituted sour cream. No mozzarella so I used a mix shredded cheese I had on hand. Used fresh broccoli instead of frozen and cooked it till almost done before adding it to meat mixture. Tomorrow Iโ€™ll halve and gut a green bell pepper, stuff it with this and pass it off to Punkin as a whole new dinner! Win win!! ๐Ÿ˜๐Ÿ™Œ

    I loved this and so did my non-keto family!! We have made MANY recipes on your website and it doesnt let us down! We doubled it to freeze one! If you like spice I totally recommend adding Siracha or a hot sauce in to it when you add the cheeses and heavy cream. Sooo yummy! I do have a question though! How long would you recommend cooking the frozen meal? The same time? Thank you!

      Great idea on freezing it, Carson Jones! To cook it, I would completely thaw first. Set in the fridge overnight to thaw and cook about 25 minutes when you are ready.

    Made this tomite…used .5 pound hot pork sausage and 1.5pounds ground chuck..
    I steamed frozen broccoli til it was bright green..5 to 6 minutes…it was really good and filling. Family loved it. Easy recipe and very tasty. Will definitely make again

    I added some mozzerella cheese pearls as well. It.added some chewy cheese pockets…yum..also steamed frozen broccolli for about 3 minutes .

    Iโ€™d suggest cooking the beef and onions first, drain then add spices and garlic. Youโ€™ll pour all the flavors off and have to re-season later. Great recipe though!

    This is my kind of recipe…easy, quick and nutritious–and filling. I eliminated the beef broth because I just dumped my frozen broccoli onto the meat mixture while it was cooking and it had plenty of moisture already. Used my own mixture of cheeses on hand and it browned nicely in the oven. I often skip the oven and just spread the cheese on top of the hot cooked mixture and put a lid over it till melted and gooey!
