For the Fat Head Pizza Dough
  • 3/4 cup almond flour
  • 1 and 3/4 cup mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 egg
  • pinch of salt
  • 1/2 teaspoon Italian seasoning
For the Pizza
  • 2 cloves garlic minced
  • 1 tablespoon butter
  • 1/2 cup whipping cream
  • 1/4 teaspoon Xanthan Gum for thickening
  • salt & pepper to taste
  • pinch of Nutmeg
  • 1 grilled chicken breast chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated mozzarella cheese
  • 1 cup fresh spinach chopped

Instructions
  1. Preheat oven to 400 degrees F.
  2. Make & bake the Fat Head pizza crust, according to THESE directions.
  3. In a small saucepan on the stove, brown the butter and garlic for a couple minutes, while stirring on medium heat.
  4. Whisk in cream and heat until almost boiling.
  5. Reduce heat and whisk in Xanthan Gum. Stir until thickened. Add salt, pepper, and nutmeg.
  6. Pour cream sauce over the top of pizza crust.
  7. Top pizza with chicken, spinach, and cheeses.
  8. Bake in the oven at 400 degrees for 5-10 minutes until cheese is melted. Makes about 6 slices.

Pizza with white sauce is a nice change of pace from tomato sauce, and my family loved it! I always appreciate that this a crust you can pick up, and it truly tastes like yummy pizza that just happens to be low carb!

    I am curious… can these be made ahead and frozen? I see a lot of conflicting info on other sites about it so just wondering if anyone had tried with success?

      YES! Let the cooked crusts thaw in the fridge and then cook toppings on it for like 13-15 minutes at 425. That said, cheese can become crumbly in the freezer, so handle these with care!
