Here are three simple methods for cooking up frozen cauliflower rice into a delicious and easy keto meal.
Ingredients
1. Chicken Pesto Cauliflower Rice:
- 2 teaspoons olive oil
- 8 oz. bag of frozen cauliflower rice
- 4 tablespoons prepared pesto sauce
- 3 oz. grilled chicken, sliced
- 1/4 cup chopped tomatoes
- Optional garnish: fresh parsley & shredded parmesan cheese
2. Alfredo Mushroom Cauliflower Rice:
- 4 teaspoons olive oil, divided
- 1/4 cup chopped onion
- 2 oz. fresh sliced mushrooms
- 8 oz. bag of frozen cauliflower rice
- 3 tablespoons prepared alfredo sauce (or homemade keto alfredo)
- 1/2 a can green beans, drained
- Optional garnish: Fresh chopped parsley & shredded parmesan cheese
3. Taco Cauliflower Rice:
- 2 teaspoons olive oil
- 8 oz. bag of frozen cauliflower rice
- 1 teaspoon Goya Sazón seasoning (from the packet)
- 1 cup taco seasoned beef, cooked
- 1/4 cup prepared salsa
- 1 cup Mexican blend cheddar cheese
- 1/4 cup cilantro
Directions

Chicken Pesto Cauliflower Rice:

- Heat a skillet on the stove to medium/high heat with 2 teaspoons of olive oil. Add the cauliflower rice and saute for about 4-5 minutes until tender.
- Stir in the pesto, chicken, and tomatoes for a minute until everything is warm. Garnish with a bit of fresh parsley and parmesan cheese if desired, and serve.

Alfredo Mushroom Cauliflower Rice:
-
- Heat a skillet on the stove to medium/high heat with 2 teaspoons olive oil. Add the onions and mushrooms and saute for a couple of minutes until tender. Set those aside.
- Now add 2 more teaspoons of olive oil and add the cauliflower rice to skillet. Sautee for about 4-5 minutes until tender.
- Turn heat to low. Stir in the alfredo sauce, green beans, and the cooked onions and mushrooms. Sprinkle with a dash of salt and pepper as desired and garnish with a bit of fresh chopped parsley and parmesan cheese (optional).

Taco Cauliflower Rice:

- Heat a skillet on the stove to medium/high heat with 2 teaspoons olive oil. Add the cauliflower rice and saute for about 4-5 minutes until tender. Season the rice with Goya seasoning.
- Turn the heat to low, mix in the beef, salsa, cheese, and cilantro, and enjoy!
Optional garnish ideas can include hot sauce, sour cream, fresh cilantro, and avocado.
